Curious about Brettanomyces? With our 7th Anniversary Project we've developed a series of 7 unique beers with the same base Saison recipe built with amaranth, lemon grass, grains of paradise, and rose hips. Each individual beer within this series is fermented from start to finish with 100% Brettanomyces and aged on French oak Chardonnay barrels. Each beer within this project is fermented with a single unique Brett, showcasing the dramatic diversity of the organism. Brettanomyces drie is by far the most aromatic with notes of light peach, straw, pleasant subtle manure, and graphite.

Wierd and different, thanks for the hookup Jason. Uninteresting really, other than some tart rosehips and white wine taste. Maybe better fresh? I've got a few of this series.

A: The beer is clear light yellow in color and has a light amount of visible carbonation. It poured with a short bright white head that quickly died down, leaving some wispy lacing on the surface and a thin collar around the edge of the glass.
S: Light to moderate aromas of funk are present in the nose; these become stronger as the beer warms up.
T: Similar to the smell, the taste has lots of flavors of funky brett yeast—wet horse blanket seems to stand out in particular.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation. There is a slight amount of dryness.
O: From the smell to taste, this beer is all about the Brett and is quite funky.

very cool project from trinity, making seven different beers, all with a single unique strain of brett, on the same base saison style. a cool experiment and great way for the consumer to learn a bit about the nuances of brett as an agent of both flavor and fermentation. this one is brett drie, which is apparently one of the more aromatic strains, almost smells like french saison yeast in this pale yellow beer with quite a bit of haziness to it and not much head, although it turns out carbonation is fantastic. apricots and peaches come to mind in the smell, maybe nectarines, with some herbal notes, lemongrass or lemon thyme, and citrus, maybe limes. very fruity, very complex. the peach thing is there in the flavor too, very soft though, like the fuzz on the skin of the fruit itself, and with intense funk to it, stopping well short of sour, but definitely approaching puckery as far as its wildness goes. a nice hopping on this too, aids the aromatic and the taste, balancing the more lively fruitiness. it would be cool to have even a few of these beers side by side, hard to really comment on the specific strain without having much to compare it to, but this beer is outstanding, and i look forward to continuing to explore the series as the other beers come out. delicious and refreshing in hot weather.

Floral nose. Lemongrass really comes out. Hint of pepper on the tart finish.
