One Ear is an unspiced 'naked' Saison brewed with barley, oats, and rye. A Free-Rise fermentation develops a light fruit and pepper, while the assertive hoping profile creates a dry finish.

A: The beer is clear yellow in color and has a moderate to high amount of visible carbonation. It poured with a two finger high bright white head that has excellent retention properties and consistently left a finger high head covering the surface and lots of thick rings of bubbles around the sides of the glass.
S: Moderate aromas of bananas and peppery spices are present in the nose.
T: The taste follows the smell, having some notes of bananas and more in the way of peppery spices from the yeast and rye.
M: It feels light- to medium-bodied and a little dry on the palate with a moderate amount of carbonation.
O: The yeast profile in this saison is rather interesting—at first it almost seemed like I was drinking a tripel—but as it warmed up a tad the spices started kicking in.

One Ear is a proper looking saison. The body is bright golden, polished. A touch of chill haze runs throughout but it's fairly clear. The pure white foams rises instantly to three fingers, it's microbubbled and tight with tremendous staying power. Chunky drink lines cling to the glass and lively carbonation keeps the foam in place. Belgian-esque. Just right.

The nose is also very Belgian-esque. Bright, yet dewey, still on the tree orchard fruits kick things off; apricot, gritty pear and soft green apple. There's a nice spiciness present but it comes courtesy of the hop profile instead of the yeast profile, which is how I prefer. Straw, a little herbal with a touch of juniper. There is a dusting of white pepper that's complimentary.

The flavor profile is bright and seamless. The above mentioned orchard fruits are the most prolific but even they ebb and flow. That straw and herbal bitterness brings with it a rustic flair. Undercurrents of white pepper, juniper, and faint bubblegum add some depth. This is a really well put together saison. Each drink is unique and each drink is delicious.

A light, effervescent body is what we have here. It's bubbly and airy, like it's Belgian brethren. The bitterness slowly builds with each drink until it reaches moderate toward the end of the glass. The finish is dry as the Sahara, which helps push that appropriate bitterness. This stuff goes down way easy.

One Ear is a really great beer from Trinity. It's perfectly dialed in from the look and feel to the nose and flavor profile. It's rustic and old school, bright and delicious. Well done. I would highly recommend this one.

Poured from 375mL bottle into a tulip.

Appearance: cloudy silvery-gold color with a good effervescence and a huge cap of pillowy shite foam. Love it!

Smell: a nice, round malt aroma with a good Belgian character and hint of sweetness. I quite like it.

Taste: this is a subtle and accomplished mix of smooth hops and even smoother malt; it's a little sweet, a little peppery and nicely hoppy for the style. I think it's a great combo.

Mouthfeel: medium body with a huge, well-integrated carbonation. This is damn near the apotheosis of creaminess.

Overall: this beer rubs me in all the right directions. Outstanding.

Look: Straw color - cloudy - mostly opaque. Massive amounts of foam - 4 finger head. Wouldn't pour all into a Belgian style glass!

Smell: Grass, Belgian yeast, some spice, very nice aroma. Earthy and grassy.

Taste: Hay and grass. Slight tartness, but sweet and malty. Spices / Herb flavors intensify. Remains on the sweeter side.

Feel: Medium +. Quite full feeling for a Saison.

Overall: This is what I am looking for in a Saison. Not too much spice, and not too much Belgian tang. Highly recommend picking up a bottle or grabbing a glass in the tap room.
