This is a beer that really needs a new style. Much stronger and darker than most Saisons. It pours very dark brown almost black with a medium sized silky tan head. Good head retention and moderate lacing. The aroma and taste are very similar, large malty presence, caramel, chocolate, and a hint of roasted nuts. This is balances with a large spice presence. There is almost no indication that there is alcohol in this beer which is crazy for a 12.5 ABV. The mouth feel is really silky and smooth with a medium body that drinks almost to easily. I would say this is one of my favorite saisons.

Grabbed some day after the release - tap only at Trinity. Pours a murky dark brown with a tiny head. Not much carbonation overall and tasted pretty light for such a dark-bodied brew. Funky saison nose with nutmeg and allspice. Banana flavors and somewhat sweet up front.. Has some dark fruits and caramel in the finish. 12% ABV. sneaks up on you after a glass or two. Went terrific with a basket of deep fried bacon and sweet potato fries (as recommended by the bartender).... nice call / nice brew.

Also known as Nocturnum Saison.

This pours a rich mahogany with a tan head. The nose has bready malts, spicy yeasts, plums, figs and a nice herbal presence. Taste has rich malts, dark pitted fruit, floral spices, peppery yeast and sweet alcohols. Medium to full body was a crisp yet light carbonation. Impressive.

The darkest "saison" i've ever seen. Dark brown with light lacing.

Very aromatic. Herbal, malty, yeasty, chocolaty and spicy.

The taste is powerfully rich and delicious. Cabernet, spices and yeast.

Thin to medium mouthfeel with a decent amount of carbonation to just barely justify this being called a saison. I had no idea how high the actual abv was when I was drinking this. 12%??? Wow. The alcohol is extremely well hidden.

An innovative, tasty creation that I hope to try again.
