Notes: Brewed with flaked oats, flaked wheat, tangerine zest, and lemon zests. Fermented 100% with a very rare variety of Brettanomyces this beer is exceedingly aromatic. Aged on French Oak Chardonnay Barrels and roses petals for complex maturity and sweet earthy notes.

Really wanted to like this; really loathed the mouthfeel, and found the flavor-profile sub-standard. Very oligo-dimensional: some leathery, grapey funk, and bit too much Gerwürtztraminer-like sweetness, and not much else. Decent barn and pear nose, solid—though slightly too still—appearance, and not a total abomination ... but just not very good, at all.

Maybe (hopefully?!) the taps at the Paramount Café did it an injustice?

Poured from bomber to snifter

A: Pours a bright yellow with a small white head which fades quickly. The only positive about the appearance is the bright body.

S: Yum! wild yeast with strong lemony citrus and some earthy dull earthy tones. Very strong appealing scent.

T: very surprising, the taste is no where near the intensity of the smell. lemon and yeast come out the most, with small amounts of earthiness. The taste is very dull compared to the smell. The funkiness is still there, but not what you expect. As this beer gets warmer it the funky flavor come out a lot as does the sour. Serve this just below room temp.

M&D: Mouthfeel is thin and decently carbonated. Drinkability is very high, since the taste is mild a person could do a bomber easily.

Bottle shared at CL Rosso Release today 4.16.11. I was excited to see this after drinking a whole bunch of Old Growth. For a wild ale, this was not the best or favorite that I have ever had but it was the first wild Wit.

Poured a slight straw color stale in appearance, slightly hazy and a dusty light white head.

Aroma of barnyard , more appropriately described by an earlier review as mothballed wool sweaters. A light wit presence, light carbonation, and a bunch of oakey funk. Mouthfeel is true to a wit style, light and with a tinge of lemongrass / possibly some light spices.

From a 750ml bottle, batch # 397-9 poured into a couple of snifters. This brew appears a lemony yellow color that is cloudy with a mountainous 3 fingers worth of white head that actively fizzes away to nothing. A swirl revives a finger of large bubbly head that fades to just a few bubbles across the surface.

The smell of this brew is lemony and funky with Brett. Citrus fruits and lots of rind-like character are the dominating aspects of the nose. Some floral component and herbal notes add some depth to the brew.

The taste of this brew is minorly reminiscent of plastic mixed with bretty funk. Its both floral and sweet with a light caramel touch of residual sugar before the onset of rindy bitterness. Lots of lemony flavor and a little bit of nail polish remover aspect comes out as the alcohol becomes more pronounced in the flavor.

This is a light to medium bodied brew that is highly carbonated. No alcohol is noted until the brew reaches room temperature and it has a bit of warmth to the back of the throat. I failed to read the label or do any research about the specific ingredients in this brew prior to giving it a review. After the fact, it makes a lot of sense. Those rinds and zest really come out in this brew. I didn't pick up on the wood addition at all. The wit was an interesting base to play with and funk up. I would like to see trinity do this again and possibly try to sour it.

From a capped 750 ml bottle into a snifter. Pours a cloudy, golden straw color with almost no head retention.

Sour, lemon citrus, yeast, and saltiness in the nose. Pleasant and confusing at the same time.

Tastes of sour citrus. Very earthy, but saison is the backbone. Picked up slight oak as it warmed. Grassiness through out. Very little carbonation.

Very drinkable for the style. Was hoping for more tartness and heat from the alcohol(4.8abv).
Overall, it was a unique and likeable beer. A little expensive at twenty dollars. It would be interesting to see how this beer ages.

Got a 750 of this off a trade of some surly and new glarus for ska and tninity!

Aroma: a mixture of funk and a tiny bit of citrus. very intriguing. I've never had a funky wit beer.

Appearance is cloudy like you'd expect. No head to speak of and barely carbonated.

Flavor: mildly sour at the start, kinda empty in the middle, but gushing with citrus,fruity yeast, cherry, a bit of brett funkyness in the finish. mouth waters for more instantly!

Mouthfeel; Mine was extremely under carbonated which I'm assuming wasn't the intention. Without carbonation it's rather light bodied and a little carbonation would really help this beer.

Overall-this is a fantastic beer for drinking on the porch on a 90 degree June day in Minnesota. The funkyness of the brett is strong in the nose, but is very much in the background in the nose.

This beer really works for me. I'd say it's the lawnmower of funk beers.
