Brewed with an absurd amount of pumpkin, candied endive, cacao nib, zest of Buddha's Hand, and Grains of Paradise. Fermented with various strains of Brettanomyces along with Saison yeast then aged in Chardonnay barrels.

Barrel No. TBB 1-6 Bottle No. 652/12

Cloudy, sunset orange. Very thin cap of fizzy bubbles form before disappearing almost immediately. Looks pretty flat throughout remainder.

Really shines in the nose. Bright citrus zest. Lots of orange and tangerine. Little funk, and some oak.

Sort of loses me in the taste. While the bright spots from the nose translate well, I'm picking up on the cacao and it is completely out of place for me. Mouthfeel is really nice. Nice tartness. Crisp and light-bodied. Would be hard pressed to peg this at 10%.

The whole cacao aspect detracts from me liking this beer more. Take that out, and you have a pretty decent sour.

Pours a hazy, almost light milky, orange with a short-lived thin white head.

Nose is bold, assertive and distinctive with bananas, tangerine, white grapes and mixed spice. Pleasant and complex. Acidic stone fruit and a hint if citrus make pretty nice. You can find Chardonnay but its light and found only because you know it's there.

Mouthfeel is rich and bold, full bodied and big. It is a real mouthful of bold assertive favors.

Labeled a "saison regal" it is very much a good saison...on steroids! Saison profile in all respects but with more intense banana, stone fruit, hint of salt and a cacophony of spice and green herbs. There is clearly a Chardonnay flavor profile. This flavor profile is very food friendly, pleasing, layered and complex. An intense flavored beer but well balanced. I get no cacao at all, however.

Finish is layered and also complex. Green and herbaceous, hint of celery and salt. A green pepper bitter character in finish as well.

All in all very nice

Acquired from a one of my favorite coworkers. Drank out of a Night Shift brandy style glass.

Look: Less than a half finger of eggshell colored quickly dissipating head, color ranges from peachy to ripe orange, extremely hazy and cloudy, minimal lacing.

Smell: Sharp acetic smell on the nose, Brett funkiness, slight bakers chocolate on the nose, fruity oaky Chardonnay, mustiness, a bit of funky cheese, dark cherry, a hint of booze. A lot going on but it avoids being overwhelming.

Taste: Very wine forward, acetic acid as you could have gathered from the nose, wine wet oak, a good helping of non-grassy/dirty vegetal flavor on the back palate, minor cameo from Brett funk, sweetened green apple candy, a little lemon zest, over ripened tart cherry, the finish is quite sweet although not overly so, the chocolate that was slight in the aroma is almost completely buried.

Feel: Medium light mouthfeel, viscous, slick, lingering buggy sour, dry finish.

Overall: A lot going on and I'm usually not a huge fan of kitchen sink sours, but I think this is a solid beer despite the short cameo appearances of the candied endive, Buddha's Hand hops, and pumpkin. Could perhaps use a bit less time in the barrels as the wine flavors and acetic acid are a bit overwhelming in a beer meaning to showcase ingredients that you've used an "absurd amount of".

A: The beer is very hazy yellow in color. It poured with a quarter finger high white head that died down a bit and left a thick collar around the edge of the glass.
S: Light to moderate aromas of aromatic, moldy cheese are present in the nose.
T: The taste is a slight improvement over the smell, as the Chardonnay barrel aging masks some of the funky cheese-like flavors. Hints of pumpkins are also perceptible.
M: It feels light- to medium-bodied on the palate and has a moderate amount of carbonation.
O: This beer has a nasty smell that is almost like taking a whiff of stinky cheese. It seems that the only thing this beer has going for it is that it manages to hide all traces of alcohol from the taste.
