It's officially summer and cucumbers are coming into harvest. Cooling cukes are such a nice treat that we decided to make a Saison d'été with them. Adding a large amount of English cucumbers per barrel, and just enough lemon zest to lend an overall brightness to the beer, this recipe is quickly becoming legendary.

Bottle from Kump. Served in a Cantillon tulip.
A - A voluminous white foam settles to a collar, a few wisps on top, and minimal lacing. Hazy pale golden straw body.
S - Big cucumber aroma, with vegetal skin being the dominant contributor. Spicy farmhouse yeast and light grain presence.
T - The taste has more malt sweetness and some nebulous spices as well. Not sure if that's from the yeast or if there are grains of paradise or peppercorns or something. The combination of spices and cucumber gives this a vaguely Indian note. Vegetal cucumber skin finish.
M - Zesty carbonation, medium-light body, dry finish, with perhaps a touch of residual sugar. No perceptible alcohol. Not as tannic as expected for a cucumber beer.
D - Quite enjoyable. Reminds me of thetomG's cucumber saison, and that's a good thing. I crushed the 375ml bottle. Would order this again; might be the best beer I've had from Trinity actually.

Look - Nearly a 2 finger head with a moderate pour from a 375ml bottle. Light orange-tan hazy (if you pour out the whole bottle and get sediment). Head retention is ok - fades out quickly
Smell - Strong cucumber smell. Some nice herbal notes. Spiciness from the yeast. Some malt and caramel.
Taste - Instant sweetness. Cucumber blasts in - Not too much cucumber, but a good amount - you can't miss it. Malt sweetness backs off a bit and you start to get the traditional spicy yeast flavors you'd expect from a Saison. Slight bit of bitterness - possibly some from hops, but barely register
Feel - Felt thin - light bodied - hoped for a bit more mouthfeel. More carbonation wold have been good.
Overall - Great Saison overall. Very flavorful. Refreshing. It's a 6.4% ABV beer but feels more like a session beer as it is light and quenching.

There are few flavors that ring in summer like the freshness of cucumber. The talented folks at Trinity Brewing are just smart enough to pile the vegetable onto their summer saison for a bright, floral and fruity taste that's sneaky enough to make you enjoy drinking a salad.
Its pale straw color carries a moderate haze and a creamy loose froth. Its ripe and pleasantly vegetal scent is chocked full of citrus, melon, bright herb and a spicy twinge to remind us that there is indeed a beer underneath the cucumber. The taste of the saison shares its lightly sweet graininess with a taste of whole wheat bread and light honey.
As the flavors ebb and flow, the sweetness drifts and the herbal and vegetal taste comes out ahead. Cucumbers are intensely flavorful with the taste of melon and basil that dominate the session. Underneath, lime, lemon and apple play counter to peppercorn and pickling spices for a lasting nearly winey taste with a peppery bitterness to close.
Medium light and trending more and more peppery and dry, the beer's winey tone crashes the finish with white grape and orange peel. Lightly bitter, the hops of lemon pepper and lemongrass trail into a medium length finish along with those drifts of cucumber that waft over the senses.

L: Very light yellow, a white wine color. Almost no head, left no lacing.
S: Faint cucumber, earthy hops.
T: Follows nose. Very refreshing.
F: Light body, moderate to highly carbonated.
O: Very nice. I'm finding cucumber to be a great ingredient in beer.
