WOW. Just WOW.

Haven't seen the perfect balance of sweet and sour since Ommegang Rouge. This is even better, if that's possible.

It's a very clean sour, and I suspect this is because it's largely pasteurized juice added post fermentation. No funk at all here. And if you care about bacteria/yeast diversity: I don't see any of that here either. But you don't need that to make a killer sour. And this here is a killer sour.

Poured with a thick head, likely due to serving conditions. Remained hazy after settling, a pale golden hue.

Smells floral like a clean Gewürztraminer from Alsace. It's a fairly simple nose, but boy does it linger, and "simple" does not make a negative, just like "complex" does not make a positive, despite it's over use as a descriptor.

Tastes like? I don't know. I'd say white sweet tarts. Some may say peach, but this would be one unripe peach. This is sweet yet tart, like a sweet tart, but NOT chalky or dry. The front of the palate is lively and slightly savory, the mid is where the sourness kicks in, and the back has a nice--real nice in fact--lingering sweetness. Not cloying at all. Just a well balanced beer, and the perfect mouthfeel for a sour.

Served at local watering hole in a 8 oz chalice. First thought was Cuvee des jacobins. Appearance is the reddish-brown one expects and the smell is very similar to other wild ales. However this beer is more tart than typical and definitely a unique taste on the back, perhaps the peaches? It also has more of the yeast 'burn' that I associate with traditional belgian dubbel or triples.

Overall I enjoyed this beer a great deal. The burn made it difficult to consume more than the amount I received, so I rated it lower than perfect. However, I would gladly drink one a day if I could.
