Shimmering peachy-gold hue, small flakes of yeast slowly dance to the bottom of my glass. The white head was modest in size, about a finger, very sticky, thick rings of lace were produced. The bouquet is lovely, peppery throughout, apricots, distant grapes, and a hint of spice, maybe alcohol. The nose is not very potent. I was surprised at how utterly soft the palate was, lightly peppery, petite alcohol… the fruitiness is prevent for sure but too malleable, apricots and tropical fruit, it’s a delicate tasting Ale. The “horse blank” qualities are present but very minimal. The finish is sharp, the alcohol bites with baby teeth, quick and very “more-ish.” Very good… a little to easy on the palate, more complexity and more boldness is definitely wanted. Medium-light body, token carbonation, it is as soft as a cloud on my tongue. This is a worthwhile Golden, try one, it is just not a world-beater.

Feb. 2014: 500 ml stoneware bottle, as Sterkens St. Sebastiaan Grand Cru Bière Forte, capped and with swingtop. ABV is 7.5%. Bought at Alcampo, Gran Canaria. In the German translation on the label the beer is classified as a "doppelbock", which it clearly is not, despite being brewed according to the Reinheitsgebot. Pale golden colour, large and lasting white head. Nice and "typical Belgian" spicy aroma, also some fruity notes. Fairly light bodied for its strength , nice and mild spicy flavour, again "typically Belgian", not too sweet.

Look: Wow! this is one attractive beer. golden amber color with a nice white foam that persists for a while. If this beer was a guy, you'd best believe I'd be hitting on him on touching his arm in a flirty way. Also, the color is like very dehydrated pee.

Smell: Bready, fruity, citrus, hoppy, sweet aroma, very fragrant! you don't have to smell very hard to pick up the nice aroma of this beer.

Taste: Mango, passionfruit???, slight alcohol taste, little bitterness, very dry, hoppy. In my opinion, this ale needs some food to go with it. Its kinda hard to drink all om its own because of how dry it is. However, the fruity taste is quite nice and is pretty balanced.

Feel: Dry mouth feel after, not carbonated very much, not much else to say, nothing extraordinary, just a simple small town beer.

Overall: This beer really attracted me, with its nice body, I mean, bottle and when i poured it into a glass, its color and foam were really beautiful and attractive to the eye. However, as I got to know the beer, I kinda felt like I wasn't as attracted as I thought I was. Don't get me wrong, it's still a good beer, just not THE beer. Hope one day I'll find the beer that was meant to be. My soulmate perhaps. (btw if youre still reading this I'm single and open to talk.)

I prefer the off-beat (but rarely like the off-beat and crazy.)
Serkens' bottles are merely off-beat and, frankly, innovative since the cap allows me to finish the ale on the second day.

The recipe for St. Sebastiaan is less off-beat. In fact, it is what I'd expect from a Belgian Golden Ale. (Not so sure about the tripel categorization.) Sebastian is fruity, spicy (other than just hops), bubbly and sweet. The difficult-to-imitate, traditional Belgian yeast flare is there to tell me this is the real thing.

I look forward to finding other offerings from these brewers.
