Fieldmouse’s Farewell is our Harvest-time seasonal beer. A saison that is slightly sweeter, slightly more full-bodied and golden than Jack D’Or, and therefore might be slightly more approachable, depending on your taste for hops (fewer bittering hops in this beer). The hops are wonderful, old-world French hops from Alsace. We happened upon them, along with their representatives, at the Craft Brewers’ Conference and we were immediately smitten.

2013’s “vintage” of this beer has even more grains than usual, with the usual high proportion of rye malt giving spiciness. We fermented with all one saison yeast and it’s a very saisony tasting beer this year. We are v happy.

Early Fall: the fruit and grains are ripe and nature’s work is almost done. It’s time to think of moving on… which is exactly what this little mouse is planning on doing, so find him while you can. You might notice that Field mouse has moved from Springtime to Harvest-time, because it seems like our mouse would be more likely to up-sticks at this time of year, with the fields becoming empty. Perhaps he is following the sun… Cheers to you all, hope summer was great and busy and that Fall will be peaceful and fruitful.

Thoroughly enjoyed from the 22 oz bottle in a DFH snifter. This fine saison pours beautiful glowing orange with a nice head of white foam that subsides to a thick ring, thin pooling layer, and features some VERY nice lacing. Nose of earthy yeast, orange peel, lemon zest, sweet candy malts, and subtle herbal hop notes. Flavors exceed the nose with moderately rich candy sugars dancing about herbal hops and earthy saison yeast on the front, a sweet orange note rolls on the sides with a touch of apricot and slices of pear with herbal hops blending with spicy rye notes that fade into the back with subtle grain notes. Very approachable and enjoyable. Light carbonation, subtly dry aftertaste. Excellent

This beer pours a clear golden hue with tones of ruby. Head is frothy white, and gone fairly fast. The smell is permeating nicely, with banana, fruity esthers, of apricot, strawberry, and candied sugar. The taste starts out dry, with hints of banana and a mix of other fruity esthers, such as apricot, pluot, some earthier malt present giving a balance of wheat and pepper. The mouthfeel is nice; medium/heavy body and mostly malt coming through, however some dry -hop/ bittering hop is slighlty present. Farewll Pretty Things _ you will be missed.

750ml bottle. Poured out a clear, golden orange color with a small, off-white head of foam. It smelled of clove, spices and toasted caramel. Sweet toasted caramel with spices and a yeasty kick.

22 ounce bottle into tulip glass, bottled in 8/2015. Pours slightly hazy orange/amber color with a 1-2 finger dense off white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a light amount of streaming carbonation. Aromas of lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, herbal, grass, and yeast earthiness. Damn nice aromas with good balance and complexity of fruity/spicy yeast, earthy hops, and bready malt notes; with good strength. Taste of big lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, herbal, grass, and yeast earthiness. Moderate amount of earthy bitterness and yeast/rye spiciness on the finish; with lingering notes of lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, and herbal/yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; with a great malt/bitterness/spiciness balance and zero cloying flavors after the finish. Moderate amount of dryness after the finish. Medium carbonation and body; with a very smooth, fairly crisp/sticky, and lightly creamy/bready mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an awesome and unique saison style. All around great complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; and very smooth and crisp to drink. A highly enjoyable offering.

Pours a really tasty looking glowing cloudy sorta amber with a long lasting topper that starts at a couple fingers and only gives up a bit of that ground so it always looks super inviting as it is consumed.

Immediate candi sweet and funky tart front a medium strength aroma. There's some righteous spice in there too, but it is a minor player. Once it warms some nice sweet fruitiness, and a bit of floral, enter the aroma as glass meets nose. Very enticing.

First sip shows some hop joining the party in a big way, and the funk is revealed as an earthy note. It hits nicely, very impressive sip this first one. Along the way to room temp, and blended delight, this beer throws some great flavors. Earthy and deep bitter from this yeast and deep herbal bitter from the hop combine forces. It would be out of control if it weren't balanced by some righteous jammy sweet. There is some black pepper, and stone fruit flavors as the glass empties. The blended harmony of these flavors is delicious.

Don't know what to say here, this is a different sort of saison, I don't know how this is supposed to feel, really, so I gotta say the mouthfeel is the perfect frame for an extemeophile's delight of a saison. Nicely carb'ed and sere finish that is a delight.

Wonderful treat that has that great ability to throw a bunch of flavors along the way to becoming a blended and awesome beast of a beer. Highly recommended.
