750 ml bottle, poured into two snifter glasses. Acquired from the Michael Jackson Rare Beer Club, and shared with my girlfriend on a relaxing summer night outside.
A: Dark rustic amber body with an overall brown hue to it. A fluffy and sudsy slightly off-white head sits atop. Retention is fairly nice as well is the lacing. It's much darker than I expected it to be for a Saison.
S: Dark roasted malts, slightly floral hops, biscuits, some very dry and hay like funk. It doesn't, to me, have those very light, fragrant and sweet notes I expect in a Saison. Even for a Belgian Saison it's definitely something different.
T: A lot of roasted spiciness comes off first, along with a sweeter caramel malt flavor. A touch of pepper, floral hops and some vanilla is left in the finish. This is a very disappointing and weak flavor profile, and completely departs from my expectations for a Saison.
M: Very thin and watery. Bubbly, very carbonated, just an okay feel here.
Both my girlfriend and I agreed, this wasn't a bad beer and was drinkable but did not meet my expectations for the style. I wouldn't buy another bottle but it was nice to sample once.

Appearance: Pours clear amber, then muddy amber after pouring yeast in. Fluffy white head with good retention.
Aroma: Floral and herbal
Flavor: Herbal and floral. Low sweetness. Restrained bitterness. Alcohol very well hidden for 7%.
Mouthfeel: Light to medium bodied. Short finish.
Overall: Initially pours a clear amber, but muddies as you pour the yeast in. I like this. It has a unique aroma I can't quite put my finger on. Not Brett-like, but more floral and herbal. Nice. Flavor follows aroma closely with faint citrus fruit note. Drinks light. Short clean finish. I seemed to have rated it much higher than everyone else, but it is a easy drinking with unique flavor and aroma and none of the barnyard/Brett yeasty character that I don't like in many Saison. Well crafted.

Pours a clouded nut brown color with a noisy, medium sized head.
Smell is surprisingly hop forward, revealing a noble, matured quality among slightly less pronounced caramel malts and melting toffee.
Has a vivid, yet balancing carbonation with a lighter, refreshing mouthfeel to it.
Tastes of ground coffee, bakers chocolate, wet leaves and a hint of toffee, blending together to a balanced and complex first impression. This gets enriched by the beer‘s higher carbonation, adding a mineralic quality, which tones down the well fitting sweetness in this. Finishes mellowed out with some wood bark, more pronounced bakers chocolate and faint hops.
I expected something totally different but this was a great surprise. Very complex and well balanced, this convinces, due to its unique flavor profile.

Great fortune to have this "5th Sense" on a hot summer day at a family reunion (one of my nephews is a hop-head.)
Aroma was hugely citric and the initial taste was refreshing, but the hops took over and I drank no more as I knew it would not go with the food. And what are saisons for, but to go with food?
Interesting that this beer is inspired by American IPA's. But, they seemed not to make it too bitter to drink...just too bitter to go with food.
Bought this because it was on the "1001" beers list and, arguably, should not have been.
