Notes: A blend of barrel aged Four that has fresh homegrown fatali chiles added for a couple months before bottling. It also incorporates light use of brettanomyces yeasts providing a contrasting earthy backdrop for the bright chile flavors. Cellar for up to three years.

750ml bottle, split

Well, this was quite exceptional. A light cloudy straw-orange body with a healthy white froth - very light and refreshing. Tartness perfectly in balance with a kick of heat from the chiles - funky and yeasty, lots of lemon and earthy must, dry finish. Lined this up with a spicy dish for dinner - will be going out to find more of this ASAP.

Poured from tap into a wineglass, minimal head, good lacing. Hazy pale yellow in the glass. Smells slightly acidic, somewhat earthy. Taste is initially a acidic, tart, lemony, sweet tart, then the finish is super dry, earthy with the chili heat. Supurb ride on a sip. Great drinking beer on the patio. Not super with the heat, but it lingers on the palate.

On tap at the Grain and Gristle tonight

The beer pours a solid gold color with fair head retention and light lacing. The nose is fairly attractive, especially if you are a sour lover. There is considerable sour funk, along with some light honey and lemon/lime. The flavor profile replicates the nose pretty closely in this beer, though it's not as sour as I was expecting given the aroma profile. There is also a hint of vanilla flavor, which along with the honey, is pretty nice. Mouthfeel is medium bodied to light, with a wash of sour on the finish. Drinkability is OK, but I'm just not enough of a sour fan to appreciate and/or enjoy this beer.

While OK, I can't say I found this to be a particularly memorable effort from the folks at Upright.

Bottle from Brewery Creek. Crazy and yummy. Frosty golden yellow body with a small white head. Some lace. Funky aroma. Sourness and spice drives good drinkability.Grapefruit, lemon,vinegar and sugar. Best Uplands yet, despite big carbonation. A little bretty, a beer soup.

Thanks Thorpe! A chili beer / saison, I'll try and and I ended up liking it, served in a snifter.

Beer is yellow and hazy with a wispy white head of small bubbles, some lacing, some carboantion, low retention, looks good.

Aroma is yeasty and sweet with this mild spice.

Beer is light in body, late spiciness, decent not overpowering. There is this mild floral sense and this nice vegetalness that finishes a little dry. I'd have this again.

it's actually FATALII four, but whatevs.

33 oz stone growlerfull for a fiver. hazy golden. perfumey aroma brings to mind rose petals and fresh cut grass with a hint of funky stinkweed. that funk evolves when pondered upon to something more farmy.. its mingling with the hops show a real hint of orvallian wonder.

initially, a straight up wit with hop balance and a brett zing. the flavor follows through with some mid-grade yet lingering heat.. and not like a burn, more like a buzz. the pepper flavors are present upon warmth, and nose breathing brings more heat to the party. some real nice fruitiness comes together with the yeast on top of the peppers.

damn, this is one of the best fruit beers i've ever tasted. and this being the bottom of the last keg, i think i inherited some extra testes-enhancing scorch. no worries, i can handle it.

Pale gold, minimal lacing with sharp clarity, austere.

Aroma is killer. Oak in spades, light dried fruit, no hint of the chile onslaught ahead.

Taste is unique and very nice. Bright fruitiness with a building moderate chile heat on the back end. Peachy and peppery. Like a nice mango chile salsa but barrel aged. Feel is fairly light bodied, though the heat makes you slow down a bit.

Overall this is a very unique chile beer, one that I'd seek out to try again for sure.

My fourth Upright beer, and incidentally, the fourth one to begin with an "F." Hmm...thanks to msubulldog25 for this and every other Upright beer I've had.

From the label: "a barrel-aged wheat beer with chiles." Had never heard of the Fatali (or Fatalii) chili before this.

The pour results in an amazingly cloudy peachy/sunset yellow/gold color. The head is built of larger-than-normal bubbles, kind of soapy looking.

The smell is wonderful. Led by a funky yeast earthiness, a tart, intensely aromatic citrus rind character comes in right behind it. These traits are bold and out front, very Belgian farmhouse in character. A tart, sharp white wine-like presence is here too, maybe reminding most of Chablis or champagne. Chili isn't detected in the nose.

Fatali Four has an attractive and complex taste. Chili is bold and folded over all other flavors, somehow never intrusive despite being so prevalent. A vinous character again reminds of Chablis, sharp and acidic and tart, and the wood seems to be the thing lending a dry and super-earthy element to the overall flavor picture. Yeast gives a dirty/earthy twist. Zesty lime rind sweetness and tartness come in too, and this tartness, along with the heat, carry through strongest in the finish.

Feel is dry, crisp, buoyant, yet still with substantial weight and considerable carbonation. Spiciness plays with the dryness and makes the mouth feel nicely fiery.

One of the most interesting beers I've had in ages. Fatali Four is an intensely flavorful beer that has to be taken slowly, or its sharper intensities can become overbearing. And I'm taking it slowly, I've got all night.

Tried this a couple weeks ago at Upright's tasting room before a Blazers game; at the time it cut right through the sinus congestion and sore throat I had festering in me. This time (28 Nov), I had a 12 oz. pour ($2!), again at the brewery, from what was said to be the last remaining keg.

The Fatali (or Fatalii, spelled both ways), akin to Habanero and Scotch Bonnet, ranks #6 of all pepper varieties in Scoville Units (i.e. HEAT) according to wikipedia. These peppers (uncertain of the quantity) were added to barrels of Upright's standard #4 saison.

A: Golden wheat with a cloudy haze. Thin skim of white cream, a clinging ring that drips small flecks of lace. Plenty of rising carbonation.

S: Surprisingly lemony-tart 'saison' aroma, a light and fresh lemongrass more like it... not bad, but not much 'pepper' to distinguish from the usual #4.

T: Starts with a light wheat, grassy and faintly sweet. Then, after a couple seconds, a mouth-filling warmth ignites...not a searing heat, just a budding spice and lemon-pepper tang. Married with the natural floralness, peppery dryness and mild yeast 'funk' of the base beer...well, it's damn good.

M: Crisp carbonation, airy and light, with a sinus-clearing heat. A little viscous, oily coating.

D: It is the #4 (which I really enjoy) with a perfectly savory/mouth-watering warming of peppers added in perfect quantity for my tastes. Love the result and am sad to see this one go. Among the more interesting new beers I've tried all year. My vote is cast for a reappearance in 2010.

Pours with a thin white head... pale hazed golden..

Nose is a sorta spicy lite Belgian with a hint of coriander. No real chili to speak of.

Flavor is a bigger witbier/lesser saison with a bit of orange peel and minor yeasty phenols.. the chili flavor is there, but mainly only on later pours.

You really have to stick with this one to get the chili.. the heat really does grow and completely melds with the base beer.

Body is much better than expected for a 4.5% brew.. so is the carbonation.. everything is in the right place.

Thanks Sean.... this one seemed pretty damned fresh... and it was soooo far off my radar... I truly appreciate it.

Gold with a fluffy white head leaving nice lace.

Smell is sweet and heat, fruity esters.

Taste is fantastic. Awesome base saison with an emphasis on the yeast, but nicely integrated hop presence. The pepper finish is killer, just enough to notice behind the firm lacto pucker.

Mouthfeel is light and dry.

Drinkability is through the roof, this is a fantastic saison. The pepper note really adds some interesting depth without overwhelming the base beer.

750 mL bottle shared by Adam. Per Adam: "This is good, but don't pour this in your eyes".

One of the better pepper beers I've had. Appearance is mildly cloudy golden citrus with a soapy off white head. Minimal retention and lacing. Aroma is deceptively tame. Citrus, mild funk with a touch of pepper. Pleasing, but suggests a tame saison with a mild kick. Flavor is similar to the aroma, initially citrus and juicy flavors dominate before some light saison funk. Finish gets hot and the long aftertaste becomes pleasant warm, singing the roof of the mouth and corners of my chest cavity. Slightly under carbonated and watery in the finish. Reminds me of my favorite, Saison Vautour with a respectable pepper addition. Very impressed.

Thank you, Brian. My Upright spree continues. Gushing, this beer is a mildly hazy yellow with a thin, dense white head with decent retention and minimal lacing. The nose is awesome. Fresh, juicy lemony hops with brightening citrus a moderate botanical note ( juniper and spruce) Along with a moderate funk and a touch of sulfur. The peppers add a delicate heat to the nose. Really, though, this smells like what you'd expect barrel aged four to be - refreshing, fruity, bright.

The palate is a whole different beast. The spicy tingly heat Is immediately apparent coating my lips and palate in a pleasant citrusy warmth. Rather botanical on the palate with a blend of citrus, juniper and a wonderful hop character, this is great. The mid palate brings out some acidity and funk, a blend of lactic and lemon acids, and a general earthy funk. Light in body and moderately carbonated, this beer finishes with a slow-burning warmth, along with lemon juice and a little honey. Excellent stuff, easily the best chili beer I've had. Can't wait to see what age does to this beer.

22 oz bottle of latest batch shared with Tyler Brown at Barley Brown's 5.28.11, side-by-side tasting with Hot Blonde.

Half finger slightly off-white head on top of slightly haze medium gold body, no visible carbonation. Big dose of funk in the nose totally subsumed any chile aromatics, threw some lemon-like esters, floral hops pushed into the background. Taste mirrors the nose, brett inspired funk, more sour than tart, though I was surprised how little chile was present, got minimal warming, certainly paled in heat and chile aroma comparison with the Hot Blonde. Mouthfeel medium, decent effervescence, pretty dry finish. The PDX homies told me this was more sour than previous batches, and I'm alright with that, though wish more chile heat had shown through.

750ml bottle - hmmmm, chili pepper heat AND bad ol' Brett, that's a new one for me.

This beer pours a hazy, pale golden yellow colour, with a teeming tower of puffy, finely foamy, and creamy bone-white head, and lots of rising effervescence that just keeps on adding to a spoon-necessitating experience. Eventually there is some random limestone arch lace left around the glass as it lazily recedes.

It smells of sassy stone fruit (apricot and nectarine), blended domestic citrus rind, gritty and grainy pale malt, a lesser cereal wheatiness, indistinct earthy chili pepper spice, a mildly funky yeastiness, and some tame vanilla-forward oaken barrel notes. The taste is semi-sweet, grainy and bready pale malt, sharp blood orange, white grapefruit, and lemon/lime citrus zest, equal to the task musky stone fruit, a still subtle but you know it's there chili heat, thankfully understated musty and earthy Brett funk, and more weak white wine-like barrel woodiness.

The carbonation is fairly laid-back after its opening frothy-assed gambit, the body a decent medium weight, and sort of smooth, I suppose, that is if your cognitive dissonance meter is working as it should be in cases like this. It finishes off-dry, the malt and big fruity essences having a minor slap fight with the lingering chili spiciness.

Overall, this is one pleasantly rendered chili beer, the multi-vectored fruitiness going a long way in balancing out the heat, while the other sundry players look on in amazement. Surprisingly easy to drink, given everything that is going on (and once the pour settles the hell down). Worth checking out, if you like this sort of thing.
