Notes / Commercial Description:
The Apricot Seven is a blend of two oak barrels soured from Artisanal Wine Cellars. Both were treated identically, being filled with a batch of Seven in early January 2011 along with Oregon apricot puree and a bit of brettanomyces. After eleven months, the two were blended and have been sneaking out here and there in draft form, while this ten case release was saved until now. At this point the beer has a significant earthy and fruity quality with distinct tartness rooted in both apricot and brettanomyces fermentation byproducts. Perfectly suited for fans of funky and sour ales, this one is just fine now but can be cellared for several years for more pronounced wine-like flavor to emerge.

Served from 750 bottle into snifter glasses.

A: Slightly burned orange, fairly clear. Medium head.

S: Apricots - not quite sure if it's closer to fresh apricots or preserves. In any case, it smells great.

T: Sourness balanced by hops and apricot flavor. Quite lovely.

M: Medium body. Carbonation seems to be on the low end, which is just fine for an acidic beer.

O: Apricots go quite well with the base beer. Very nice.

Review from notes.

A: Hazy peach/orange color with a small off-white head on top, great retention and tons of lacing.

S: Lots of fresh apricots, faint funk and wood. Very inviting.

T: More apricot, wheat, and a slight tart/brett flavor.

M: Medium bodied with nice carbonation, rather smooth.

O: Fantastic beer, apricot flavor was very fresh and vibrant.

Appearance: Pours a milky straw color, with a thin head that settles to a film.

Smell: Apricot is vibrant, peppery, earthy; there's flesh, skin and pit. There's a lactic note, and a bit of oak, but apricot is dominant.

Palate: Some astringency from the apricot skin hits the tongue up front, and tart flesh follows. White pepper, oak, slight acetone, gentle acidity. Pretty tannic, with a medium-light body. Fruit is dominant and lingers throughout the finish. Ends on a peppery, earthy note; apricot and rye bread.

Overall: Good - better than Fantasia to me. The flavor profile is feels just slightly muddled, and there's a touch of acetone, but it's otherwise really enjoyable.

Seven aged in wine barrels with apricots

A - Pours a hazy reddish-dark orange with a fluffy cream-colored head with good retention.

S - Lots of apricots, some funk, wood and candy.

T - Tons of apricots with a wood tart finish.

D - Good carbonation with a lighter body. Silky smooth mouthfeel.

O - Tons of apricots, Amazing! The best Upright I have had yet.

Another silky creamy wonderful apricot beer. Pretty similar to the last batch. Blind, I wouldn't be able to tell them apart, but are fantastic.

Opened at 4/20 tasting.

Very bright orange-yellow (apricot??) color, pretty nice off-white head.

Decent amount of apricot in the nose, some berries or other fruit, brett and mild funk, a little sourness.

Tastes different, some sweet fruit but not a very specifically apricot character, hint of brett, light tartness but not terribly sour, finishes fruity but dry and grainy.

Mouthfeel is pretty thick, syrupy, not enough carb but no hint of booze.
