Bottle 32/120.

Pours a clear, semi-translucent dark yellow/gold color with a decent size, bubbly white head that, as it recedes, leaving behind quite a surprisingly large amount of soapy lacing.

The aromas begin with Brett funk and stone fruit, with a white grape vinous-like quality to start. Definitely a lot of oak and emerging lactic, acidic sour lemon and more peach notes come out more as it warms.

The tastes begin with sour Brett lemon and equal amounts of stone fruits. The oak and vinous grape skin flavors then pop almost immediately after. There is some more fruitiness and almost a creamy lactic quality in the finish as well. The doughy Belgian Saison yeast flavors from the base beer emerge as it warms but the oak and fruity apricot/peach flavors linger more than anything else.

Mouthfeel is medium-light bodied with medium carbonation. Finish is semi- but not super-dry, sweet fruits and frying oak work hand and hand to have a nice balanced finish.

Overall this is a very above average saison, not my favorite Sole Composition beer but that is tough criticize because most of these beers are stellar. Not as good as the De La Seven from last evening but still very very good.

Bottle 103/120

Pours a cloudy peach color with a small, fizzy white head that falls quickly into a thin collar, leaving behind a ring or two of lacing. The nose carries a moderate amount of peach with some light acidity. Light other stone fruits and a hint of tropical fruits in the background.

Peach and acidity carry on long through the finish. Body is light with fizzy carbonation. The finish is quite dry.

Another extra base hit from Upright. No surprise at this point.

Pours a hazy golden orange color with a big white head. The Fantasia character really comes through. Heavy on the peaches but still a nice oak aroma. A touch of tropical fruit, maybe some grass, and a nice lactic sourness. The lemon and peach flavors are quite pronounced and work very well. Some tropical fruits, a little melon, and good wood flavors are also present.

Bottle 103 of 120. Big thanks to thorpe429 and starrdog for all the Upright bottles we were able to open up.

A - Golden yellowish hue with nice white head.

S - Lots of spicy funkiness with some slight peach in the background. As it warms up, the peach really comes out from the Fantasia.

T - Wow. Really complex combination of spiciness and barrel. The peach comes through on the back end. There is an odd minerality, which borders on medicinal type of flavor. It's faint, but it's there. I thought it played with the peach really well.

M - Full carbonation and super drinkable. Light enough to go back to repeatedly but still a ton of body there.

O - A real standout in the group of Upright beers we had. It was a really divisive beer, but this really worked for me.

Bottle #9 of 120, a 750ml split to four glasses with friends yesterday. This was a gift from us to them back in late spring and we vowed to open it after their baby was born. Their son arrived on 9/5/12, so we all enjoyed this bottle on 10/14/12...

A: Butterscotch/copper/orange pours for 3 glasses, and surprisingly clear - then the last one got most of the hazy funkiness - but a gorgeous autumnal color in general. Head was a modest cap of white fizz, but I think our host was pouring extra slowly & carefully. Lacing was subdued, a few flakes is all.

S: Lots of peach (thanks Fantasia barrels!) and steady woody/grassy scent. Five (the base beer) shows a little of its hoppiness, a grassy and leafy herbalness.

T: Mmm, lots of peach! Surprising how much flavor was imparted, just by using some old barrels - lots of grainy/ashy residue! Pretty tart, a bacterial funkiness that tastes extra mineral/chalky to me. Woodiness is like hay and twigs.

M: Surprisingly crisp in first sips, an effervescent carbonation. Light-Medium body, refreshing. Dry finish, a slight grainy sheen left behind.

O: The focus here wasn't to 'geek out' over a special beer meant to enjoyed with our friends... so the notes are more recollections and generalities. I certainly thought it was an enjoyable beer, full of peachiness and wood, easy to finish. Our friend H, really wanted to try this while she was pregnant and so we saved it for her - I think she wanted something more hoppy and was the last to finish. All in all, a good tartness.

PS: Also tried this on draft back in the spring at Bottles on NE Fremont (PDX) - its alias then was "Fantasia Five"

Thanks to Starr for sharing this. Served in a snifter. Beer is cloudy and amber / orange with a wispy white head of tiny bubbles, minimal lacing, moderate carbonation.

Aroma is fruity,sweet peaches, a little lactic.

Some of these barrel aged beers from Upright has this odd creaminess to it. It is sweet and peachy but that mouthfeel is odd and gives the beer an odd flavor. I like it but it was OK. I'd try it again.

Another big thanks to oregonskibum for sending me out some fine Upright beers. Served alongside a bunch of other Sole Composition beers. This one is also called "Fantasia Five."

Pours a slightly hazy golden-orange with a thin white head. Aroma is more typically saison-like than a lot of the other Sole Composition beers, and the barrel doesn't jump out at you, but there are still some nice hints of oak and peaches. The flavor is interesting, the peach comes out initially and works really well with the base beer. However, something goes a bit wrong in the finish. It's somewhat bitter, maybe a little too oaky and too much mineral. I'm left with a very odd taste in my mouth after every sip. Mouthfeel is medium-bodied with nice carbonation. Sadly, I'm a little disappointed in this one. It's certainly not a bad beer by any stretch of the imagination, but I loved Fantasia and I love pretty much everything Upright does, but there were just some odd flavors in this beer that really kinda threw things off for me. Our group seemed pretty split on their feelings about it - I think two people loved it, three people felt more like me.

A 25 cl glass at Belmont Station on 4/18/12

Slightly hazy with an definite amber hue. The decently sized off-white head has good lasting power and produces a smattering of lace. Aroma has sour cherry, oak, and peach characteristics. Tart, with a nice sour cherry punch up front. Lively carbonation and light body. Finishes with a good amount of bitterness.
