Notes / Commercial Description:
Natural Selection is one the cornerstones of modern biology and now Maryland craft beer.

The collaboration began with Genus One, a stock ale and the origin of species. This, Genus Two brewed by Evolution Craft Brewing Co. is aged in Four Roses Bourbon Barrels the contribute tones of vanilla, oak, tannins and bourbon heat. The Genus Three brewed by Flying Dog is generously dry hoped with Galaxy hops.

750 ml bottle poured into a snifter

A- A deep ruby red with a small off-white head that disappears quickly.

S- Toffee, caramel, dark fruits, bourbon, vanilla, oak.

T- Toffee, cherries, earthy/oaky finish, some vanilla, some bourbon.

M- Light body, heavy carbonation.

O- Pretty, better on draft. Not Evolution's best barrel work, but still worth trying. Still have another bottle laying around to see how this ages.

A: Served a reddish brown color clear and with a light tan head that settles to a thin layer of tiny bubbles.
S: Caramel, toffee, dark cherries, port, vanilla and dark bread make a wonderful bouquet.
T: Sweet, rich malt profile with fresh bread, caramel and a touch of clover honey. Great notes of vanilla and dark cherries and oak from the barrel aging.
M: Medium body with a slick mouthfeel and light carbonation. Slight alcohol warmth.
O: This is a decent old ale that really blended well in the barrel to come out a stellar beer! My first beer from Evolution. Great job on this release! This beer is a great sipper and should definitely be given a try.

Kinda loud and fizzy. Tan head, 1 inch, that settles down, but stays firm and present as a tan cap to the deep red and brown body.
Malt, wood and some oxidation. The malt was more neutral and not sweet.
In taste the wood turns to oak/vanilla very distinctly and is notice throughout, including the fairly long finish. Soft alcohol. More complex malt flavors show, but still not very sweet. The bourbon is faded and appears in unusual places, like the finish where is mixes with the oak. Not boozy in any way. Less oxidation here. A strong drying elements on finish. As it warms and opens up the bourbon shows forth, but still not overpowering.
Moderately big and more carbonated than most old ales.
It becomes a smooth an enjoyable drinking ale in time. The flavors start to blend nicely and the feel softens as the carbonation fades.

Was really looking forward to this barrel aged beer, Poured a nice draft, but so so lacing. Suggested thin brew, Aroma was very good with bourbon and wood/vanilla forward. Now I'm getting excited. But taste is slight. You get the bourbon, but it's light...and nothing really else. Where's the base. Ok Ok there is a taste, but nothing remarkable, It's just there. And the mouth feel is thin. drinkable, but just not exciting. Maybe if there was some real malt back bone and and a solid ABV this would be worth discussing. But overall this is just boring.
