Off white sticky, foamy pencil thin foam cap

I get citrus , orange , grapefruit on the aroma

Citrus hop forward over malt taste

Low sudsing , good hop taste smooth , light bite

Had this on tap at Hurricane Hannas near Ocean City MD. A great IPA for hopheads, yet approachable enough for others!! pours a fairly clear amber color. White frothy head but I can't comment on head size since it was served in a chilled pint glass. Rings of lacing on the glass. Strong hoppy aroma, citrus all the way with grapefruit up front and some mango. Flavor is hoppy and citrus forward but there is fairly strong caramel malt to mute the hoppiness a bit. The finish includes some resiny piney hops. An impressive array of flavors but no simple hops blast to discourage those less enamored with head-shrinking bitterness. Mouthfeel is rich and crisp with some balance between hops and malt (with hops winning out). This is one of the better IPAs andI'm glad I was able to get a fresh one on tap!!!!

Vacationing in the Bethany Beach/Rehoboth DE area. Last time here I was quite impressed by Evolution Brewing from Salisbury MD. Looking forward to trying IPA no 3 after having enjoyed no 6 the last time.
From the bottle it pours an amber color. A vigorous pour produced a bubbly off white sudsy head that soon dissipated to a soapy ring collar and a smattering of lace.
In the nose, my first impressions are of fruit. This consists of apricot, mango, peach, and a touch of grapefruit. Interestingly there is a buttery and caramel malt feel. Not the most IPA like aroma in this respect except that towards the middle there is some pine, resin and herbal dank as it warms.
Speaking of Delaware, DFH, particularly 90 minute IPA, was one of the beers that got me deeper into craft beer ever since I started vacationing here years ago. In some ways, Evo no 3 reminds of a more subdued and drinkable 90 minute IPA. It has that creamy and velvety malt mouthfeel with perhaps a lighter body. It can also be buttery, caramel like, and with a tea like finish. At times the dominant flavor appears to be sweet and malty. Yet there is a gentle and quiet hops profile. It is neither bright nor brassy like other citrusy and resiny hop bombs. Instead it feels like one of those understated and darker Flemish paintings depicting simplicity in landscapes or still life. (Like Vermeer) The hops tend to take on a soft and subdued juiciness and a fruity quality; apricot, peach and mango. There is some mild pine that adds a light touch of bitterness.
Overall this is a nice accessible IPA that is sessionable and a bit on the malt forward side.

Reviewed from notes. Rcvd in trade. The appearance was a somewhat hazy golden amber/copper color with a two finger white foamy head that must last for a good minute and a half until finally it started dieing and leaving some foamy bubbly lacing clinging to the sides of the glass. The smell was a strong pine/citrus combination of sweet to bitter stickiness in the scent, decent caramel aroma in the background. The taste was bittersweet all the way through in a spectacular caramel sweet sort of way. Bittersweet pine/citrusy aftertaste leading to a dry finish. On the palate, it sat a light to medium in body with a decent sessionability about it. Carbonation is good for an AIPA and for me as there’s a decent acceptable harshness and a good dry bitterness lingering over my mouth and tongue. Overall, this was a pretty good AIPA that I would have again if I saw it and this would even be a decent offering with its respected food.

I've kept Evolution #3 in my IPA rotation for years. It's such a solid early '90's-style IPA. I really like the glow the ale provides on a sunny day when you hold it to light. It could be a bit more pungent, but the herbal/resin flavor has such a nice lingering taste... If you're in the DC-Metro/Baltimore area, it should be a fairly easy find.
