2015 version. Smell is Rum with almost a tripel smell. Taste is almost all tripel. Great beer. Will grab a few more to age.

L - A rich creamy limited head gives way to a slight splotchy lacing and thin to moderate collar... The color is a deep rich peachy amber... A slight haziness is suspended throughout... Still with no discernible carbonation...

S - Belgian yeast notes... Tropical fruits... Candied sugars... Subtle nuances makes for excellent depth and complexity...

T - A aromas from the nose appear on the palate but become a bit more muddled... The rum barrel aging is very subtle and exceedingly sleek and smooth...

F - On the fuller side of medium bodied... Velvety smooth... Limited carbonation... Sleek... Even and consistent... Rather elegant...

O - A very nice brew... It want "wow" you, but it will certainly satisfy you... Evolution doesn't get much notoriety but they turn out quality beer after quality beer...

I tried this from the bottle at Warwick hotel, served chilled in a goblet.

The color is lightly hazy golden amber with thin white head. The smell is fruity and vinous with a tart oaky and mildly estery nose with gentle alcohol scent. The feel is mildly warm with slight spice and moderately carbonated with subtle sweetness and dry tannin in the strong finish.

The flavor has a good amount of malt in the entry with slight fruity yeast flavor and rum in the middle with a pineapple like tropical taste from yeast with woody flavor in the back with a relatively high amount of alcohol in the finish. Overall this is pretty decent but the rum doesn't do much for me, it comes off as a little too heavy on alcohol flavor -I like the base beer in the first few sips, though

Had this at the brewery and was extremely impressed. Went and got a bottle at the local shop. Cap appeared to be bent, no carbonation to speak of. Great color, oily in texture without being overly thick. No head/foam, tasted very flat with hints of rum...not sure if it was busted or what...

Spring 2014 (bottle 184 of 1500)

Appearance: A pop of the cap and I knew the carbonation was going to be low; a reasonably hard pour raises a bit of head over the hazy honey colored liquid; the head quickly fades and no lacing whatsoever appears

Smell: Butterscotch, rum, honey and hints of spice cake

Taste: Butterscotch and nuts, up front (reminiscent of butter pecan ice cream), with honey and rum flavors building; spicy phenols develop, after the swallow, but the finish is a nice combination of all the flavors previously noted

Mouthfeel: Full body with low carbonation

Overall: Despite the carbonation issues, this beer has a nice flavor profile; a bit of age has taken what I suspect may have been a harshness out of the box; the alcohol has mellowed and the flavors have coalesced; I suspect the age may have impacted the carbonation, negatively, as well
