Small bottle poured into a 4.5 oz champagne taster glass at The Birch. Golden color, and very well carbonated. Spicy Belgian yeast aroma, and intense tripel. A great combination of spicy, fruity, and alcohol flavors.

Bottle purchased at Beers of the World in Henrietta, NY.

This one pours a light golden orange, mostly clear, with a towering 3 inch head, and lots of lacing.

It smells pretty classically De Dolle, with their signature yeast strain, apples, lemon, sweet syrup, honey, and some grassiness.

I don't traditionally love tripels, but it's fitting that De Dolle would make one that I actually like. It's got a wonderful honey and apple sweetness to it, with a slight grassy hop bitterness, and a bready malt background. It doesn't feel like a lot of tripels that I've had- it feels more unique, and certainly more tasty.

This is medium bodied, rich, and a tiny bit syrupy, with a higher level of carbonation.

This is another amazing beer from De Dolle- they consistently knock it out of the park.

A: Pours a golden orange color with a massive head that slowly fades down to a nice cap

S: Belgian yeast provides some nice spicy notes and fruitiness while some esters throw off more fruitiness, mostly banana and apple. Some lighter wheat notes in there as well

T: Follows the nose. Starts off with the spicy yeastiness along with some lighter fruity notes. Goes into some dry malted wheat notes and some light alcohol. Finishes with lingering wheat and yeast notes

M: Medium bodied with moderate carbonation

O: A classic tripel that has a huge focus on the yeast and is a bit on the drier side. Does give off some off band-aid notes every now and again but that might just be due to the immaturity of this particular bottle (only 4 moths old). Worth checking out, although preferable with a little age on it

Pours a hazy bright sun golden yellow with a light orange hue and fizzy carbonation that dissipates quickly.

Peaches, caramelized sugar, toast, caramel, apricots, and a slight tart aroma.

Apricot, peaches, and stone fruit flavor is right up front and gives way to a slightly peppery yeastiness and sweet caramel.

Medium-full bodied, medium-high carbonation, slightly boozy.

Overall, a little boozy, the alcohol could be a little more well hidden but a damn good beer in general. On a side note this was a 3 year old bottle and held up very well, but is much better fresh or after a couple of years tops.

Pours a light gold, hazy, with a very big head that leaves lacing. Nose is boozy dough and fruity esters, maybe a little peppery hops. Taste is...damn strong. A tripel turned up to 11. Phenols, black pepper, alcohol. What it lacks in drinkability, it gains it "punch your face." Very high carbonation. Overall, a very interesting beer, but I can't say I loved it.

Bottled July 2014 and poured into my Trappistes chalice. Deep golden color with plenty of head, carbonation as you would expect. Significant amount of sediment as you also might expect for this bottling date. I wouldn't mind trying a fresher one as this is a solid beer for sure.

I had this again with pasta
I increased my rating slightly from 4.02 because its carbonation cuts through the oil in the marinara sauce and the ale's spicing complements the sauce.

It opens with a wonderful smell and perfect head and color. Cloudy, of course, and I left nearly all the sediment in thee bottle (drank that separately - a bit nasty, but I had to do it). The aroma is a wonderful sweet, boozy smell.

The taste is wonderfully complex mix of sweet, funky fruitlike tastes. It is not at all over the top or difficult to drink in any way. Just a wonderful sipper. The aftertaste has a minor bite. I think the Belgian idea of a raging bitch is very different from thee US version - she's much more mellow than our Flying Dog.

This is a highly recommended Belgian. One of my all time favorites of the style. I decided to go Belgian a bit this weekend in solidarity to our Belgian brothers. This $5.50 was well spent.
