pour is hazed ruby red with orange edges and a foamy off white head. Nose is a mixed malt, caramel, burnt brown sugar, and light musk, some tart green apple, hint of wood and faint touch of red wine. Taste still has a touch of that burnt caramel, a touch papery, green apples provide a pleasant taste mid palate, yeast bill behind, faint oak and maybe a touch of juicy red wine and a hint of tartness. Body is heavy, soft carbonation, very smooth and easy to drink.

Got this one from the brewery back in January. I've had quite a few bottles/samples since then, but finally getting around to reviewing a bottle I drank alone while on vacation in France.

From a 750 into a wine glass
Aged in Bordeaux barrels for 25 months
Wet cork on this one

APPEARANCE: Pours a one finger, medium looking, off-white head with decent retention. Head quickly fades to a full foam cap. Clear amber orange in color with medium carbonation evident. A wisp remains until the end leaving some decent lacing down the glass.

SMELL: Pale malts, tart lemon aromas, some green apples, red wine and some deifnite oak on the nose. Bold and interesting for sure.

TASTE: Pale malts with some green apples, red wine and lots of tart lemon at the swallow. Bold finish of oak, red wine, tart lemon and some malty sweetness as a base. The green apples and red wine give this flavors of champagne for sure. Some alcohol lingers on the palate as well. Interesting for sure, and you can definitely detect the regular Stille Nacht under all the fun.

PALATE: Medium body and medium levels of carbonation. Semi-creamy on the palate, goes down okay with a bit of a scratch at the swallow and finishes slightly dry. Could be a little smoother. Oddly enough, I left ΒΌ of the bottle in the fridge over night and it smoothened out really nicely.

OVERALL: After going though a few of these, there is definitely some bottle variation. Some of them are champagne-like, such as this one, while others are more tart and fruity. I'm not sure how to tell which bottle is which without opening them, but all the bottles I've had with wet corks have been more champagne-like. Anyways, they've all been enjoyable in their own way, and I hope to continue to enjoy this beer into the future. Great stuff. Highly recommended.
