Bought from local craftbrew store.
1 Pint Bottle Serving. Poured into Tulip glass.
"Batch 3, Bottle 1632."

A- Pours a slightly hazy, golden color bordering on orange. Fizzy out of the bottle, with very little head, approx. 3 mm. Head dissipates within seconds of forming. Leaves no lacing on inside of glass.

S-Lemony, the wheat malt comes across on the nose first, subtle citrus fruits, apple. Nothing intense or overbearing, every scent is nimble and delicate.

T-Tart, slight pucker, lemon and lime, unripened orange. Rose hips on the aftertaste. The acidity is not to high, nothing burning or cloying. The tart hits you right on the front of your tongue, and slides back, leaving nothing behind but light floral on the finish. The wheat malt is hidden behind all the flavors, clever, refreshing. The 6.8% ABVis undetectable, no strange phenols, etc. No Brett character, no funk, no horse blanket or barnyard. This is the essence of tart fruit right before harvest.

M- carbonation is light, as this beer has thick stringy mouth-feel, I feel a little more carbonation would be delightful and make this beer more crisp like biting into a crab-apple!. This beer even with, what seems like, low carbonation, still has tremendous moutfeel. The lacto fills every corner of your mouth,grabs your taste-buds, and twists them until they cry for more pucker.

O- The one major disappointment I had with this beer was according to the BJCP style guidelines, a Berliner Weisse should fall between 2.8-3.8% ABV. This beer is double that, at 6.8% ABV. While I am not usually one to complain about a high ABV, or a beer pushing the boundaries of the style guidelines, I was looking to enjoy an expertly crafted, nuanced, meticulously malted 3% Weisse. The increased ABV does not take anything away from the flavor or any of the characteristics, but it is outside of the style guidelines. It is a little to high to be a fine session-able Weisse. I understand it may be hard to sell a beer that is low in ABV, but I digress. This beer is impressive, and has been loved dearly by someone who has the skill and heart to pull off such a gutsy brew. Kudos to White Birch, for making a sour lover pucker with joy!

truly a weird take on the classic berliner. darker in looks than most, maybe something more than wheat, or more roast on it, or some crystal added, tough to tell really. heady though, nice and white and lasting, obviously well carbonated. the nose is straight parmesan cheese. never smelled this in a beer before, but its unmistakable and distinctly parmesan, all grated and stinking. thats all there is to the nose, cheese. the flavor starts lighter with the wheat malt than it looks like it should for the color. it moves quickly to the parmesan thing again, so odd in beer. i get some fruitiness in the finish, ripe pears, white grapes, and even some green apple, but there comes the cheese again, and i really can't get past it. not unpleasant at first, but getting less and less tolerable as i drink on it, and finally devolving into downright weird. not a beer i care to really drink again, but its uniqueness is memorable. fine carbonation and a nice frothy feel that works really well with spicy food, but the parmesan cheese finish is more than i care to revisit.

22oz bomber poured into Cantillon wine glass.

Appearance: Pours a hazy golden yellow color. Thin and wispy cream-white-colored head.

Smell: Lacto sourness upfront. Slight hint of oak. Clean and crisp. Something reminiscent of Brett.

Taste: A slight sourness is balanced out immediately by a pleasant, though out of place caramel-like flavor. Clean and barely crisp. As the beer warms up to 55F+, a very strong apple flavor becomes apparent.

Mouthfeel: Very watery. Light carbonation. Light bodied.

Overall: Would not buy again. It's not a terrible tasting beer, but it's just not to style. I was expecting a brewed-to-style Berliner Weisse, and instead I got something that was not. This is truly an awful waste of $5.

Bottle share at Proof courtesy of sconnell. Pours a clear straw. Almost no head or collar. Aroma is grassy, funky, and some white grape. Taste is tart, light lemon, some faint earth. Medium-high carbonation despite the lack of head or collar. Good light, crisp body. It does hide the 5.5% well.

500ml bottle poured into a sampling glass.

Pours the color of semen, it's cloudy and very hazy and yellow, pretty gross. Nose is very tart and funky and sharp.

Taste is super tart, I guess it's ok for the style but I'm not a big fan of it at all, it's just too sharp and harsh. I've had a couple of the style and this is just too harsh.

L: Pours a very energetic brilliant gold with a 2” white foam cap that recedes almost as fast as it appears. S: Has a very fresh white bread dough nose with some lemon and a suspicion of wet undyed leather, acidic. T: Attack citrusy, fruit tartness, slight funk on the finish with a lingering lemony tart finish F: Light body and a crisp, dry finish. O: Very refreshing, tart, bone dry and delightful.

Highly carbonated, hazed golden yellow with a small off-white head that falls away rapidly, eventually leaving the glass clean on the way down.

The aroma isn't particularly pleasant, with lots of sharp, stinky cheddar cheese notes, along with some wheat, and some vomit, as well. This wasn't all that pleasant to sniff.

The flavor, too, isn't particularly nice, with lots of funky, sharp cheddar notes, a bit of wheat and lemon, mild sour character, and just a hint of bile. Also, not good, however, the aroma was worse than the flavor.

Medium bodied with moderate to high carbonation.

I will decline future offerings of this beer.

Had in the can poured into a pint. Golden color with a fast disappearing head, per the style. Smelled like some malts with a hint of sourness. The flavor was decent, started a nice malty sweetness which quickly yielded to that berliner weisse sour note that sticks to the back of your throat. Finishes a bit malty and you can feel the body a bit more once it warms up. Super easy to drink and refreshing, but I will take a Festina Peche over this one.

12 oz can into a goblet. By appearance, this looks to be a very fizzy yellow beer but it certainly should not be grouped with most beers that get this description. High carbonation can be seen as well as heard, but seems about right in the mouth, partly due to the light body. The aroma is fruity and tart, as is the taste. Moderately high tartness. Clean and very drinkable for style.

Pours a very hazy light yellow color with a 1.5-finger white head. The head quickly recedes into a wispy layer on top leaving light lacing.

Smells of light malts, green apples, muddled citrus, and phenols, in that order.

Tastes more phenolic than it smells. Light malt flavors with hints of lemon peel kick things off and are joined almost immediately by muddled fruit flavors and phenols. These flavors carry through to the ending.

Mouthfeel is OK. The thickness is a bit on the thin side and the carbonation is slightly harsh.

Drinkability is just not good. I struggled with my glass and would not like another.

Overall there are some major flaws with this beer and although the possibility of a good beer exists beneath everything I'm not getting much of it.

As an update, I received a bottle of this in a recent trade. I opened it and the same flavor profile exists so it's certainly not an isolated incident.
