The beer pours a very dark red that glows ruby in the light. The beer pours with a light tan head and sits at a finger’s width above the glass with tight medium sized bubbles. The beer’s body is dark but seems to be clean of particles. The beer’s lacing is too slick to last on the sides of the glass. On the nose, the beer smells lightly tart with a nice roasted caramel body to the smell. Tart green apples dipped in caramel is really what this beer smells like. It’s not quite as sweet as that, but it has all of those nuances. The candied malts do tilt a little towards the boozy side at times on the nose, but it is not overpowering. On the tongue, the beer tastes light but tart and then sweet. The flavor begins as tart green apple which moves towards a more irony taste as the light caramel roast moves over the tongue to finish with a light cocoa chocolate flavor. The flavors are light but interesting. The aftertaste lingers with iron and a touch of tart green apple. On the mouth, the beer feels medium light with a prickly carbonation on the tongue. The mouth is left slightly puckering and damp with acidity. Overall, this beer is not terrible. It has some interesting flavors, and some nice tartness. It is a little mellow in flavor, but does have a slightly “blood-like” flavor to it, similar to Monk’s Blood by 21st Amendment. It is interesting, but did not blow me away. I wouldn’t buy this beer again, but I’m not disappointed I tried it.

Hazey dark brown color. virtually no head. fresher bottles had thin head.
Toasty malt nose with a hint of funk
sweet malt, burnt caramel, lactic sour, then slight bitter. dry finish.
Surprisingly light considering flatness. leaves a sour after taste.
Even though there are so many negative aspects to this beer. i keep going back for another sip. and then after a week or two another beer. i think i like this beer so much because its different From so many others.

Fall 2012 batch
Poured from a bottle into a snifter, the beer is a dark, solid, golden-highlighted brown coloring with a thin ring of light tan film around the edge of the surface. The beer just looks heavy. Aromas of roast and toffee sweet, with earthy tones. Meaty and buttery qualities on the nose, also. Heavier and richer aromas than I was expecting. Flavors are sour and tart all over the tongue. The sour character fills the mouth as soon as the beer hits. Roasty undertones with a rich, toffee sweetness that is hidden under the sour overlay. Very dynamic, layered palate. Some milk chocolate sweetness rings through as you drink, and it almost has a cumulative effect on the taste buds. The beer has very heavy, rich flavors, but it remains light and crisp in mouth, which is further aided by the carbonation. Sour, rich finish that leaves a slightly sweet linger behind. Very smooth and very unique. Tasty brew.

Pours a slightly hazy reddish brown with a smallish head that dissipates almost instantly like diet soda poured over ice. The aroma is controlled by a parmesan cheesy scent that stomps everything else that tries to enter my nostrils. Some funk and dark pitted fruit drizzled in brown sugar round out the nose. The flavor is quite funky with again a cheesy taste that distracts rather than complements this brew. Light fruity tartness and a hint of caramel round out the flavor. Medium body with a moderate level of carbonation and a tart bubbly mouthfeel. This beer was really at odds with my meager palette, I could not enjoy this beer and it's cheesy funk.

Poured from a 22oz Bottle Into a dfh snifter...

A: pours a nice slightly reddish brown with about have a finger of tan head that dissapates quickly to a light film... Not much lacing to speak of.

S: dark slightly tart cherry, light dark fruit, and then a strange whiff of a cheesy(lacto?) funk... Oh no... I hope this doesn't taste like the white birch Berliner Weiss, but it is just a whiff, not nearly as prominent as in the aforementioned beer.

T: medicinal cherry and dark fruit, prune and plums, accented by a mold cheese like note, super aged blue cheese perhaps, this is not to appealing to me, the flavor isn't the worst until the cheese. Not a big fan.

M: not bad for the style, medium body with moderate carbonation.

O: another rather dissapointing sour from white birch, I had the barrel aged nightfalls, which was phenomenal, and ever sense have not been able to get my hands on a good sour from these guys... The cheesey funk ruins both the aroma and the taste for me...

A-Pours a murky dark brown. Little to no head. Light assembly of bubbles. Barely and lacing too.

S-Smells slightly tart. Kinda has a sour milky nose. That cheese/spoiled milk aspect is off putting. Some wet cardboard and tart cherry. Also has some other malty Brown Ale aspects. The more I smell it, the more I hate it.

T-The flavor is better. A combination of cherries and caramel. The sour milk is still there but less prominently. It still really wears on you. The tartness doesn't seem to come from fruit, but more from some weird lactic abomination. Just doesn't go well.

M-Medium bodied and a bit syrupy. Soft carbonation. No booze detectable. Not very easy to drink.

O/D-Swing and a miss. Horrible nose. Mediocre flavor. Not for me. Who poured old milk in my beer? Damn whoever did it.

A - this anticipated brew pours a root beer brown, with some crimson highlights around the light shining throuhg, a very careful pour elicits a thin tan head with some staying power.

S - the sourness is palpable, tart fruits are evident, sour dark cherries, or even unripe thorned berries like raspberries or blackberries, some overall yeasty funk as well, sort of nondescript, don't pick up the lactic element other reviewers mentioned

T - tart cherries are dominant, the tart acts like its going to turn sweet, and does for a brief moment, then finishes with a tart wash, for a moment the lactic sweetness is welcome, a previous reviewer called it "cherries and caramel" and thats not inaccurate

M&D&O - this beer leaves me wanting, its not sour enough to tickle my sour-beer zone, not sweet enough to satisfy that aspect, too blended to have a little bit of each aspect. The cherries seema bit added on. My first less than satisfied experience with White Birch, won't stop trying though!
