Notes / Commercial Description:
Elysium is simply a place or condition of ideal happiness. Our idea of happiness is a barrel aged stout to share with family and good friends. Each barrel we use is carefully selected, a little wild, filled with stout, and aged till it’s ready. There is no hurrying a barrel. For this we think the effort is well worth the wait.

Barrel Two: Mild nose, rich smooth malts with oak, Bourbon and vanilla tone

Bottled: July 13, 2010, Barrel: Two, Bottle: 2 of 282. Purchased at White Birch. 22 oz bomber into a tulip glass.

Like barrel one this one opened with an immense gush. I did lose about 6 oz, but luckily the bottle settles down after that. Barrel one just kept foaming up.

A - Pours a black body with some dark brown notes when held up to the light. A thick two finger mocha head forms and settles into a nice cap with thick edging. Moderate lacing. Appears much more stout like, barrel one's foam fizzled away quickly.

S - Rich milk chocolate, bitter roasted malt, buttery bourbon, and a touch of savory BBQ sauce. Not great, but brettanomyces doesn't show up at all.

T - Bitter coffee beans, chocolate malt, and a sharp acidity on the finish with lingering notes of wood. Not very flavorful or intense. Very muted and one dimensional.

M - Medium bodied with low carbonation. Alcohol does warm the beer up a bit.

O - Much better than Barrel One. This beer is not soured at all. Instead its slightly savory and sharp with tame ad boring stout flavors and aromas. This series really confuses me, aged for two years and just so little to speak of.

Pours into the bottle a solid black with half a glass of creamy mocha foam on top. Nice roasty chocolaty aroma wafts from the glass as soon as liquid splashes from the bottom. Heavy vanilla and oak presence plays well with the sweet caramel and hint of ash and earth comprising the balance of the nose. The flavor follows the aroma quite well but adds a hint of tart fruit to the mix. This drinks like a 6 % stout until you get up to set the bottle in your meager recycle bin. Medium body with a light to moderate level of carbonation and a sweet silky smooth mouthfeel. I was pleasantly surprised at the lack of tart or sourness in this barrel as I had mistakenly thought that these had all turned into lambic ;) I'm glad I got to try this tonight.
