Ancient One Bourbon Dark Star is a blend of 18 and 30-month Bourbon Barrel-Aged Dark Star in 12 and 35-year old Heaven Hills barrels. Using these rare, 35-year old bourbon barrels creates a truly unique, one-of-a-kind beer. The roasted and chocolate malts complement the smooth oats to bring you a stout delight wrapped in a gentle embrace of bourbon barrel-aged warmth. A touch of sweetness dances in balance with the hops to finish with a wave and then she’s gone.

Pours pitch black with a small, dark brown head, immediately collapsing to a well sized lacing at the rim of the beer.

Smells of cocoa and bakers chocolate with a profound infusion of spicy, nostril warming bourbon barrel. The barrel adds a charred roast aroma to the nose, inviting coconut and a quality of old wood bark to the nose. Judged by its gnarled intensity, the bourbon presence reminds me more of entering an old barn than your regular praline warmth. Atop of this settle notes of fudge, mousse au chocolate and a nice licorice darkness to complete the complex and inviting nose of this.

Has an incredibly soft and full mouthfeel with a slowly evolving alcohol dryness, which just keeps on getting stronger. This by no means endangers the balance of the beverage, in fact, this is a perfect example of how far you can enhance the boundaries of a beer. It thrives from its decadent stout base, which leads to the successfull inclusion of an incredibly complex and powerful barrel addition.

Tastes of scorched malts from the very beginning with melting caramel and a subtle spiciness. Develops a huge load of licorice once the barrel becomes recognizable, led by an antique, dry oaken quality which is quite outstanding by itself. The barrel inherits dried white grapes, coconut bark, olive oil, campfire and melting marshmellows, intercepted by the luscious malt foundation. Finishes with even more chocolate, fudge and an uprising dryness, accompanied by a long lasting alcohol warmth, reminding me more of bourbon than of beer, in the most positive way.

There is possibly even more to write about this, but to sum it up - this beer is exeptionally tasty. Regular dark star’s char coldness is recognizable in here as well, weakening the beers mouthfeel, but gets eventually overcome by the comparably more profound barrel, making this a remarkable beer.

L: pitch black with not head
S: huge oak and old leather
T: like the nose....oaky for days, rusty / old leather / tabacco.
F: sadly thin to medium feel, but it's smooth.

So much bourbon and char. Thick and viscous. Charred oak, vanilla and coconut for days as well as chocolate and toffee. Unreal beer. One of the best beers to come out of the PNW

Poured into a Glencairn tasting glass (shared bottle). Amazing nose and mouthfeel. Taste was a bit on the sweet side, but not near as bad as some of the overly sweet stouts people love. Overall, a nice balanced and tasty beer.

Intense booze, barrel, char and vanilla on both the nose and the palate. I will say that this and AO B-bomb have the most barrel character I've ever tasted in a beer. Enjoyable and an amazing beer.

Poured into snifter. Thick black oily looking beer with small thin tan head. Smells of chocolate and bourbon. A chocolate booze bomb. This beer is a little hot and will definitely smooth out as it ages. I just wish I had another one to age.

Just when I thought Dark Star couldn't be any more profound, along comes The Ancient One with its 35 year old Heaven Hill barrel aging. While this beer sacrifices a bit in body to the original, its flavor adds another level of spicy complexity that elevates it to an ethereal level. The toasted coconut takes center stage, along with truffles, toffee and cream. The finish is just as lengthy as the originals, but it's a bit softer, and a tad more "old leathery". I wouldn't say it's at as good a price point as the original, but as a unique beer tasting experience, it was more than well worth it.
