Draft at the brewery. Seattle review dump.

A- Tap to can glass with a super cloudy bright yellow body and a thick fluffy white head. The head peaks at a half finger with good retention before falling to a medium belt at the edges. Many small legs but only spotty lace.

S- Balanced and well rounded Belgian yeast profile driven by that Wit strain. Spiciness with coriander and mellow peppercorn leads to lemon zest, vanilla sweets, whole grains, banana, fruit esters and clove.

T- As in the aroma and true to style the ferment and yeast are the driving force and star of the show. A bit more muddled than on the aroma but coriander and general spices give way to wheat crust, vanilla sweetness, orange peel, pepper, pear and apple esters.

MF- A light body with a very fluffy and creamy texture. Carbonation is very high and it finishes with a Belgian yeast spiciness on the palate.

Yeast forward with good balance and plenty of flavor to enjoy. Spices lead to a wealth of yeast grainy notes.
