This Belgian beer is brewed in the style of the Trappist Monks. Belgian Candi Sugar, Pilsen, Aromatic and Caramunich malts are balance by E. Kent Goldings, Mt. Hood and Saaz hops to construct a "Big Beer". Traditional White Beer Yeast is used to make this beer have a large mouth-feel and lingering spice notes in the finish.

Brewed with Belgian candi sugar, Pilsen, Aromatic, Caramunich malts with East Kent Goldings, Mt.Hood, and Saaz hops. Fermented with a Wit yeast strain. OG=1.085. Clear, medium caramel colored with a thin white scum of a head. No retention or lacing, per say. Aroma is lots of butterscotch, faintly husken amber malts, and toffee. Taste is buttery with a hint of fusels, earthy bitterness of moderate intensity and a gingerbread, cookie-like sweetness. Medium body with a smooth mouthfeel, and a somewhat harsh finish.

This is the closest thing I have tried to Trappist. This would be great if I could drink more than one, but if you want a wicked. This is strong a bit on the sweeter side for me and one that will leave well, you feeling like a drunk monk!

Enjoyed at the brewery, review is from notes from two weeks prior. Body is copper and amber and slightly hazy with a thin head. Flavor is very unidimensional really. The Belgian yeast is there and there is a decent fruity, citrus note but this one leaves you wanting more. Medium body and moderate carbonation. Underpowered if you will for the style.
