Probably the highlight of a recent trip to Florida.

Hazy yellow, straw-colored. Small white head.
Great aroma: fruity and peppery, grassy and funky.
Taste of peach and apple. Still peppery. Still kind of barnyardy. A tiny bit of hops.
This was a crisp, inviting beer. I thought it was a bit expensive at $19, but well worth the price.

The nose on this one is very apple-heavy, with some spice notes. It does have an unfortunate (to me) apple juice scent. Flavour is the same. Lots of apple, with a too-large dose of spices alongside. Finish is bitter, which jars with what is otherwise a very fruit-focused beer. Not a winner, in my books. It is apple dominated, which I don't like at all, and the spices are too strong. It doesn't really taste like a saison. Whether my bottle somehow varies from the bulk of reviewers on here (which I doubt, as it doesn't seem to have any problems) or I just have a different palate, my view on this one is quite different from the majority!

Arrives clear, bright yellow with a wee ring of white foam threaded around the glass.
Smell is weak just a faint funkiness with a whiff of malt (?) & citrus (?).
Taste is sweet from the honey, malty, alcohol, citrus, apple and grape notes. Quite boozy.
Body is just over medium with a sharp, medium carbonation. Booziness really hangs on. Coats the palate a lot. I like it.

Very light yellow with 2 finger head on pour that does not persist. One of the best noses on any beer ever, full of honey, fruit, and floral notes. Taste does not disappoint either, with honey leading the spices. Could use a bit more carbonation. Love thus beer!

"Summers here in North Florida are hot and humid, not exactly the conditions that most ale yeasts prefer. Except for the yeast used in the Wallonia region of Belgium to produce a refreshing yet complex seasonal ale known as Saison (French for season). Unlike typical ale yeasts that prefer temperatures in the 60's, these little critters like it hop - they do their best work at temperatures above 80. So we figured if we have to work in a sweltering swamp environment, why not brew a seasonal ale that enjoys Florida summers too. From the initial aromas of pepper and summer fruits to the lingering finish with a hint of floral hops, Saison Du Swamp is a bottle-conditioned ale that can be enjoyed in any season." Brewed in the style of a Saison Ale with Honey and Spices. Available in 750ml. bottles and on seasonal draft.
Poured from a 750 ml. bottle to a tulip glass.
(Appearance) Explosive gusher alert! After losing nearly half of the bottle in a mad dash to the kitchen sink, it finally calmed enough for a pour. Pours a frothy foam off-white head over a very dense and hazy straw yellow body. Retention is very good and lacing is light and spotty. 4
(Smell) Tangy, tart acidity with notes of light stone fruit, citrus juice and effervescent spice atop a malt body of pilsner and pale malt notes. Moderate funk and tanginess from the yeast profile generates a considerable souring note for this ale. 4
(Taste) Very light malt profile of cracker and pale malt with a very light sweetness and a delicate, clean and dry body. White peppery spiciness with notes of coriander, lemon and peach juice generating a subtle acidity to balance the delicate body. Surprisingly accessible and enjoyable flavor. 4.25
(Mouthfeel) Texture is chalky, light, and moderate dry. Carbonation is mild, generating a light frothiness and a modestly crisp finish. Body is light/medium for the style, light+ overall. Balance is nearly even sweet to tangy and acidic. Alcohol presence is very light and there are no off characters. 4
(Overall) An impressively built Saison ale that makes its success from the lightness of the malt body, with the tangy, acidic and lightly soured yeast showcase clearly exposed. Perhaps the most unfortunate aspect of this beer is that I lost half of the bottle before I began my review, so be wary of the possibility of overcarbonation in this ale, or perhaps older bottles. 4
