Notes / Commercial Description:
St-Louis Gueuze Fond Tradition is a pure traditional gueuze aimed at connoisseurs. It has the pure taste of a true gueuze based on a blend of young and old lambics. Fruity apple aromas stand out. When tasting, the slightly sour touches, characteristic of lambic beers, make their presence felt. It is very dry in the finish.

Served in a Prairie teku

A - pours a hazy amber with chunk sediment. A timed white cap of foam sits on top.

S - funky, salty, minerals, soured fruit- apricots, white grapes, apples, strawberries, musty lemons

T - sour and salty permeate the palate, lemon and raspberry follow, acidic funk, soured stone fruit, the malts are encompassed with sour fruit and the beer finishes bright and snappy.

M - light body, light to medium carbonation, acidic mineral finish.

Bright, acidic, and funky character that blends well with the yeasty malts. This beer has has a strong presence of soured fruit. A nice example of my favorite style of beer.

Pours a orangish brown with minimal head and immediately dissipating lace. Aroma of damp hay, grape must, bready yeasts. Sourness is actually quite pleasant, theres an earthy dankness I can't quite get around, something like mushrooms having absorbed to much moisture. This taste gains in strength as the beer sits a little while. The crispness is refreshing, this beer is quite dry.

Aroma of over-ripe fruit
Head small (2 cm), white, fizzy, rapidly diminishing to 2 mm ring and partial layer
Lacing – none
Body golden, hazy
Flavor begins very sour with no malt sweetness. No alcohol, no hops, no diacetyl, just acetic acid and a little funk.
Palate light to medium, watery, lively carbonation.

This is the most acidic gueuze I’ve ever had, a very high pucker factor.
