Notes / Commercial Description:
Part of our Ingenuity Series of Barrel-aged Inventions, Trébuchet® was created with Ladyface’s Chaparral Saison brewed with honey from bees foraging on the local mountain sage scrub habitat. Aging in California Sauvignon Blanc barrels with Lactobacillus for over a year, created a complex sour character with integrated honey, green apple and tannin. This golden-hued farmhouse ale finishes very dry, lingers long with classic Belgian yeast character, and shows homage to the French-Belgian brewing heritage and its traditional fermentation techniques.

this is wonderful beer, sour saison brewed with local honey and aged in chardonnay barrels, its really well done. super pale yellow, white wheaty colored brew, short but sturdy white head on it. the aroma is quite sour, lactic bacterial pucker right away, with notes of preserved lemons and white vinegar. its also quite herbaceous, sage and lavender flower notes, a hint of honey sweetness, and more fruity acidity from the wine and the oak. the flavor is even more complex and nuanced than the aroma, where the white wine comes and goes throughout it, at times tangy and tannic, at other times sweet and woody with vanilla that goes so well with the honey. tons of honey here, raw and unrefined, so bold, like right from the hive, really cool in this lighter bodied saison, it really comes to the fore in front of the malts. lots of wood too, and in the end, its crazy to think this is so sour, because everything else points to it being really delicate. impressive carbonation and astounding dryness for a honey based brew. no trace of its strength in the least, wow! my first beer from ladyface is majorly impressive. would love to get my hands on some more of their work, this is tremendous and should be acquired at any cost if you are a fan of these wild terroir saison types. i loved every drop of this!

Bottled 7.17.15. Pours golden with nice clarity. Smell is white wine, oak, and lacto. Taste is oaky, crisp, and tart. Just a bit of earthy character and a hint of vinegar. A bit of an undesirable sourness that lingers in the aftertaste, and hard to categorize as a saison (most resembles an American Wild) but overall very good.

A: Pours a clear golden with a quarter-inch thick white head which fades to the rim leaving a few spots of lace.

N: Vinous, fruity, tartly astringent, faint saison yeast.

T: Mildly sour, tannic, white grape, well balanced, some spices.

M: Moderate body and semi-medium carbonation. Mildly sour and vinous finish.

O: More vinous than farmhouse. Little if any funk. Pretty good. Artistic.

Pours a cloudy golden color with a white head. The wine comes through strongly on the nose. Lots and lots of white grape aroma and a surprising amount of sweet malt. There is just a light, lactic tartness to it and a bit of green apple. The flavor is tart with lemon, lemon peel, and green apple. A bit of grass and musty oak provide some slight funk.

Pours a slightly murky light yellow with an off-white head that settles to a film on top of the beer. Foamy rings of lace form around the glass on the drink down. Smell is sour and tart with some spice, wood, and slight wine aromas. Taste is of grain, sour/tart fruit, wood, and some slight wine flavors on the finish. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a good beer that has some good barrel aging going on.
