This blonde ale is dry and floral with a slight hop bitterness. The hoppiest Chimay ale, Cinq Cents was created by famed brewmaster Father Theodore in 1966.

Appearance: Pours a cloudy apricot with a beaten egg white head that coats the chalice with lace

Smell: Assorted fruit (banana, lemon, green apple, pear, kumquat), spice (clove, pepper and cardamom) and yeast must

Taste: Opens with a spicy fruit salad flavor that becomes increasingly peppery by mid-palate; after the swallow, there is a flash of bitter hops but the finish is herbacious and peppery with some residual impact from the fruit; alcohol kept pretty much in check

Mouthfeel: Medium body with spritzy carbonation; creamy, with some warmth on the finish

Drinkability: A very nice tripel, that avoids the sweetness of some of the other versions of the style; but I am not crazy about the herbacious quality

L Cloudy burnt orange with a nice head

S Liked sweet baked goods and white wine (I'm too new to this reviewing thing)

T Not very hoppy with a mild long bitter finish.

Hazy orangey-bronze. (Like cider, but more orange.) Long-lasting white head, with some lacing.
Smells of fresh cut apples and a faint bit of pepper/spice. As it warms, a bit of white grape juice and fresh-out-of-the-oven/just sliced bread comes in.

Flavor is light bready malt, a fruit+honey-glaze (i.e. fruit in not quite identifiable), and a slight (apricot?) brandy booziness. That said, it seems less than its actual 8%. Finishes with a light, pleasant, bitterness.

Feel is light, and slightly oily, with very fine carbonation, that adds a little prickle to the biter finish.

Overall, very enjoyable and easy-drinking. I would very much like to have this again.

surprised it took me so long to review this one, its been awhile, and so glad to finally have it on tap again yesterday. i think the chimay chalice is one of the best glasses in beer, and its just a fancy regal thing to get to drink the beer out of the proper glass. looks sexy as they come, clear golden beer with a ton of accumulating amassing over an inch of fluffy head, like a cloud resting on the beer, and it doesnt fall back at all. the nose is different than almost any other tripel i know of, less of the high tone yeast esters, and a whole lot less sweet and thick than many. not sure about the grain composition, but i love how dry it is, and thats what i think makes this my favorite tripel from the old world. it has all the flavor and texture i am used to in the style, but instead of a long candy sugar finish, its dry as they come, and there is a soft white peppery flavor left on the palate. awesome. some fruitiness in the middle with banana and bubblegum coming in a little bit, but it seems intentional and calculated, no messy and invasive. fuller body on a beer this color is always appreciated, and the carbonation is cheerful, classically belgian. this is famous for a reason, and deserves its high ratings here. i think far better from the tap than the bottle too. nothing bad to say about this one at all. its a beer i love in a style i could take or leave, thats rare for me.

Appearance – The glowing orange body was puddled nicely with foamy pits after the head settled down a bit. Nice.

Smell – The yeast aroma is huge on this ale. There’s some light spicing in here, lots of white pepper, and hardly any hops to speak of.

Taste – The nice big yeast from the nose comes across well at the taste. The malts are lightly-toasted, and the spices are strong but not offensive.

Mouthfeel – This is a bit bigger than medium in the body but with some potent carbs that will slow the drinker. There’s also a nice dryness at the finish, and the malts end with a welcome creamy texture.

Drinkability – Well, this ale was served way too cold, but once it warmed up it did just right by me. It went down smoothly if a tad over-carbonated and had a nice yeasty backbone, which I enjoy in the style.

Trust me: if this weren't a Chimay, it would have a much lower rating. I was at a table with 5 other people tasting it, and when I mentioned it had a smell of fresh hot boiled spaghetti water right while you're draining it into the sink, each of them said, "Holy crap, he's right! Nailed it!" So yeah, if an expensive Trappist beer with a hot reputation and the unmistakable smell of spaghetti water appeals to you, go for it.

As for flavor, well, I was already thrown of by the smell, but the taste was pretty decent. Could have used and extra 5 minutes of hops or something, as the flavor was pretty heavy on the light malts, but totally drinkable. Just not something I'm inclined to go out of my way for again. And the worst of the Chimay line. If you want the best they have, spring for Grande Reserve. If you want something light and easy to drink, try the newly released Dorée. If you love pasta, try this one.

Poured a big golden color, about what you would expect given the style with a light haziness to it that sat very well I have to say. Nice puffy white broken up head again just about right with a nice retention to it and a smooth look.

Aroma of breadiness at first gives way to light apricots, hints of grain. A touch of light grapes and a candy like brown sugar note that seems to come up stronger as it gets warmer, again, very nicely done. Very smooth, lighter on the palate then I thought it would have been, but very nice. Light banana notes, hints of light grains. A touch of grapes and light fruit as well. Very satisfying. Smooth light bitter finish capped it off rather well. Very nice again, just about right, smooth even carbonation light to medium feel and not too cloying. ABV hidden very well and the light hoppiness in the finish kicked in enough dryness to really make this one quite interesting.

Very solid offering here that I would have no issues with enjoying again. I would love to get another bottle as it really seems to have some legs.

Murky orangish gold with a generous amount of swirling yeast that remains in suspension throughout. The crown is eggshell white in color and is voluminous despite a slow, gentle pour. It appears as if a great deal of lace will end up coating the sides of the glass, but strangely enough, very little actually does.

The aroma is average in intensity and is spicy and yeasty in character. The flavor is fruity, grassy and cardamom-clove spicy. There's also an underlying tanginess. Alcohol isn't front and center, but it is noticeable.

The beer is highly carbonated, just as the appearance suggested it would be. I'm amazed at how dry this triple is. Each mouthfeel leaves my tongue as clean as a whistle.

Keeping in mind the fact that I've only had a few Belgians so far... I'm not that impressed. Maybe that means my palate isn't sophisticated, maybe it means that they're an acquired taste that I haven't yet acquired, or maybe I'll never like them as much as a good hoppy IPA or creamy stout. In any case, Chimay White, according to many, is a good to great Abbey Tripel. At this early stage of my journey, it isn't really my cup of tea.

Light orange head and a crispy head of foam. Not fluffy, but steady enough to keep the surface covered during the session. Full nose of orange, tangerine, apple, yeast, grass, pine, malt and some booze. These flavours are in the taste as well, though the hops are a bit more prominent here, especially in the aftertaste. In the mouth there's still room for fruity notes however. Mouth feel is full bodied, smooth and creamy. A nice tripel, a bit more hoppy than most other belgians in this category.

Vintage 2008. Serving date: 2009-01-23. Served in snifter.

Presentation: 330 ml bottle with freshness date (Best before end of 2010) and recommended serving temperature, glassware and cellaring procedure on the label.

Appearance: Golden yellow with brownish hues. Rather hazy. A semi-hard pour into my large-bodied snifter creates a big white head that looks creamy and thick. The head settles rather slowly and leaves a nice coat and some lacings.

Smell: Citric notes and fruity aromas - mostly bananas I think. Some wheat and subtle yeast aromas are here as well.

Taste: Again, citric and banana-like fruit flavors. Yeast and wheat provides a nice grainy and earthy character. The alcohol is present and leaves a little twang, but it's unbelievably well-balanced. The big and long finish is a bit dry, slightly alcoholic and has a distinct but gentle bitterness that sits side by side with a pleasant spices and white pepper. The finish is really good on this one, and its semi-dry spicy character seems everlasting.

Mouthfeel: Rather smooth and creamy considering its medium body and the generous amount of carbonation.

Drinkability: Another great Belgian classic, and all in all a wonderful beer. The aromas are perhaps not overly interesting, but the taste is so well-balanced and complex. As for the alcohol, you definitely notice it, but it fits into the overall character. Definitely worth a try... and a second round.

Numero 2 from my Chimay sampler pack.
Pours a nice orange color, almost neon up to the light. Sticky lacing. Not as rocky as the 'red' that I had the other week.

Spicy yeast aroma, bit of wet dog...not in a terrible way, it just reminded me faintly of that.

Grassy green flavor at first sip. Wheat in there too. Malty profile is of raw dough and sugary grass. A pleasant sour taste and mouthfeel that I really dig. Dry finish with a unique aftertaste. Maybe a bit rubbery flavor, bah. High carbonation and an interesting bitterness play together to really open up the senses.

I made sure that I got 2 pours out of this. The second pour I included all the yeast sediment and holy cow, is it cloudy now. The head is now a light tan too. Lots of vitamins in this drink! Mouthfeel became worlds smoother, almost creamy. Sweeter and less bitter. Complex flavors there that really make me ponder over it. I really like this brew now with all the yeast in there! The drinkability skyrockets.

I highly recommend anyone taste this in similar fashion, with the first pour (or pours if you've got the 750ml) being gentle, leaving an inch or more in the bottle for the second pour. It shant dissapoint!

Cloudy and glowing orange peel and banana yellow mixed together. Head is thick and creamy white, looks like a down comforter resting on the top of my beer.

Sweet graininess, estery yeast, drop of honey, white grape skin and pepper.

Yum, bright bubbling graininess grabs hold of the tongue wraps around and does not let go. There is a dollop of honey a pretty decent amount of fruity and floral hoppiness. I mean this thing seems almost borderline for a Belgian IPA. I mean it's not really over the top hoppy but they are noticeable and they are appreciated by this beer drinking. This is a beer that is far, far, far more fun to drink than write about. It has a little bit of everything: sweet, peppery, flowery, grainy, bitter, dusty. You could describe the taste of this beer about as well as you could describe the feel. Never overstated, always in perfect balance, an achievement in the field of beer making.

I was a bit apprehensive after being let down by the Chimay Blue but this beer has reaffirmed my faith in this brewery and will have to give the Blue a second shot. Love tripels and love this beer.

A- This beer explodes with bubbles like the initial water poured onto dishsoap that blooms into foamy cleanness. The head leaves thick but short lived lacing on the glass. The liquid is cloudy and colored orange with a grey tint.

S- Smells spicy, a bit of bitter orange or deep lemon. Some yeastiness in a very light musk kind of way. Maybe some caramel

T- The taste is sweeter with a nice spiciness which seems to come from both the hops and the yeast. Earthy bitterness along the sides of my mouth, but not enough to reach the back.

M- Much less sweet and noticeably hot/alcoholic than I normally taste in tripels. That really improves it for me.

O- Good, I guess this is a classic example of the style and I can see why- all the flavors are present and noticeable, but nothing is overdone or forced. A very sippable beer.

A very nice Triple, but I am not the biggest fan of Triple's compared to other Trappist ales. Appearance is the typical Triple yellow with a big foamy white head. Taste and mouthfeel are very dry and not as fruity as I would have liked. I personally would select one of Chimay's two other common offerings.
