Labeled Chimay Cinq Cents in 750ml bottle.

This blonde ale is dry and floral with a slight hop bitterness. The hoppiest Chimay ale, Cinq Cents was created by famed brewmaster Father Theodore in 1966.

A - fully hazy burnt orange, tower of head that retains big as exptected
S - light sour peach, phenols, butterscotch, light grains, all very smooth aromas
T - peach and grape, mineral and/or phenol quality, light grains and leafy greens, and just flat out tasty
M - super creamy smooth, just a touch prickly, finishes dry with a light mineral feel
O - one of the best tripels i can remember have the pleasure of enjoying, bar none!

Poured from a 12 oz bottle into a pint glass. This baby cost me 7 bucks for a better be good! Poured a hazy golden color, produced a nice white head and left behind an ample amount of lacing. The aroma consisted of malted grain, ripe red apples and yeast. Mouthfeel was world class- very smooth and creamy. Full bodied, this Tripel had a foundation of malted grain, fruit melody of apple and pear, honey, yeasty and strong flavor of alcohol. I am not a huge fan of this style, but with that bias in mind, it is an excellent example of the style. One to seek out. Prost!

Poured from a bottle into the classic Chimay chalice. Pours a wonderful golden yellow with a thick bubbly head that goes away quickly.
Tastes very sweet and yeasty.
Smells kinda spoiled and floral... It is a weird combination.
Smells and tastes like cereal a little bit.
You can definitely taste the alcohol content.
Very complex and wonderfully powerful but also delicately light.
Fantastically crafted brew.

Pours a cloudy, hazy brown orange into a Chimay glass. Momentary white head.

Fruity, yeasty aroma. Kind of a spicy orange.

Fruity flavor. Some spiciness. Funky finish.

Very highly carbonated. Medium heavy mouthfeel

Not really super impressed with this. But, it's OK.

750ml bottle kept refrigerated for 14 months.

Poured out hazy dark golden color with four fingers of craggy rocky head that lasts for over four minutes and leaves tremendous amounts of intricate lacing on the glass (and on my face.) Medium-light body and medium-heavy carbonation, unusually creamy texture for a tripel.

Smells and tastes of pears, powdery yeast, peaches, light pineapple, minimal amounts of banana, clove, and appleskins. The refrigerated aging seems to have converted a great deal of the candi sugars into extra yeastiness and removed the alcohol burn from both the nose and the flavor (compared to how it drinks fresh.)

However, I really wish it had retained a greater measure of the usual banana and clove spicing. Aging beer is truly a double-edged sword. The next time I try aging this particular beer I will be aiming for either roughly 10 months refrigerated or for about 4-6 months at ambient basement temperature to see if I can get even closer to my personal palate preferences.
