This blonde ale is dry and floral with a slight hop bitterness. The hoppiest Chimay ale, Cinq Cents was created by famed brewmaster Father Theodore in 1966.

Poured out of an 11.2 bottle into a Chimay chalice. I purchased this over a year and two months ago from a Chimay taster pack of their three beers. No freshness date, sadly, but expecting this to be just fine.

Appearance is quite amber-orange, and far different from other Belgian tripels I've had. There's not much of a head, but a decent ring preservers at the top. Carbonation is not much, but there are generous amounts of floaties available. Slightly filtered and cloudy looking, although surprisingly not as much as I expected. Overall, a creative yet not as standard take on the tripel style.

Aroma is (for me) a combination of candied sugar with a good measure of fruitiness. Granny Smith apples, as well as some apricots and peaches here and there. However, they are indeed quite subtle, as the alcohol and the yeastiness seem to be fighting each other rather than complimenting one another. For a bottle this old, I'm honestly surprised that any zest or spiciness from the hops is still present. It's definitely maltier than expected, but at the same time it's good, for an aged product.

The initial taste officially makes this the maltiest tripel I've ever had. There are still flavors of apples and dried fruits, but hardly any zest, as the hops must have completely broken away by now. On the other hand, it is rather surprising how little I taste the alcohol or yeastiness for that matter. It's dry and smooth like brandy. However, the one bizarre aspect of the tasting process is the astringent, flaky, and overall herby finish. This may be the after-effects of aging, but if anything's missing to cover it up, it's the lack of hops. As it warms up, a pleasantly soothing alcohol burn rises. While the flavor is slightly unbalanced for me, it's extremely bold in body, and really finely aged as any old wine or liquor should feel.

Wasn't completely blown away, not even with the aging process, but as this is the first time trying this beer, I have no other version to compare it to! I can imagine that fresher, it's also hoppier and zestier, and perhaps more to my liking. There are aforementioned aspects of the aging process that I particularly enjoy, but I'm looking forward to trying it fresh, as it is a creative take on the tripel style from Chimay.
