This blonde ale is dry and floral with a slight hop bitterness. The hoppiest Chimay ale, Cinq Cents was created by famed brewmaster Father Theodore in 1966.

Pours hazy orange, with a white head. Smells citrusy, of bread and of Belgian yeast. The taste is bitter and refreshing, with high carbonation and a bitter-sweet aftertaste.

11.2oz bottle served in a tulip.

pours a cloudy dull gold hue; bit of an aggressive pour yields a big, billowing 3" head. excellent retention and lacing. for a beer with this stature the nose doesn't blow me away like i thought it might (too high expectations, i suppose) but it is nice: notes of lemon, banana, maybe peach, belgian yeast, and some spice.

flavor just excels, as though the nose was merely a facade. extremely flavorful with a lot of complexity. the fruitiness of it (lemon, banana, peach, and apple notes) pair well with coriander and clove, yeast and malt. very tasty. medium-bodied mouthfeel with some lively carbonation.

overall this a fantastic beer, dare i say one of the pillars of the style. very well done.

A: single finger head on a hazy golden body.

S: aroma is very light. Corriander, Belgian yeast and tropical fruit, mostly pineapple.

T: lots of corriander, mild yeast, with fruitiness from apple and pineapple. Mild herbal and earthy notes. Fairly simple. Sweetness to the finish.

M: lighter side of medium body and high carbonation. Semi dry finish.

Overall: Chimay beers are both good and drinkable but I will always feel they are overhyped.

Appearance: Hazy dark blonde/light orange. Head is rocky, loose, and bubbly. Some faint touches of lacing. Head recedes to a small cap after a couple minutes. Lively carbonation.

Smell: Chimay house yeast up front. Pulls big on clove with some underlying ripe banana and even a dusting of bubblegum. Pale malts. Bready and yeasty in an earthy way. Some hints of lemon zest and a mild wheat-like characteristic. Appley.

Taste: Clove and more clove. It's not aggressive, it's just present and unapologetic. Some ripe banana bulls through. Yeast is a mega component. Earthy. Some pale, almost bready, malts. Apple skin and a touch of sweetness. As it warms the yeast dominates and cuts out almost everything else.

Mouthfeel: Light with a solid carbonation. Quite lively with a lingering dryness from the yeast and carbonation.

Overall: Aggressively yeasty. Comes across a touch unbalanced and suffers for it. Nice depth of flavor with a solid profile, but it's ultimately too much of not enough goodness.

750ml bottle. Chimay Chalice glass. Enjoyed on jun´12. Orangish amber in color. Hazy, evident yeast in suspension. Off-white, close, small bubbled, crown. Good retention & foamy collars. Caramel malts, vanilla, fruits & bready hints both in flavors & aromas. Sweet ripe pears in the middle, spiced notes. No bitterness. Full body, exactly carbonation. Ripe melon finish & spiced aftertaste. Marvelous, refreshing & pleasant drinkability. Perfect balanced flavors & aromas. A wow beer!
