Notes / Commercial Description:
This copper-colored ale boasts flavors of apricots, brown sugar and nutmeg. Brewed since 1982, Chimay Première is the first beer ever produced by the Trappist monks of Notre-Dame de Scourmont Abbey in Belgium.

Served from a 12oz bottle into a Grimbergen goblet.

Appearance- Hazy amber/red with one fingered bubly white head. Quick, left some lacing. Tons of sediment.

Smell- Yeast, Oaky smoothness, cherry, vanilla.

Taste- Fruity stone fruits, bready yeast, some mild spice.

Mouthfeel- Lighter with medium carbonation. Mild warmth from the booze.

Overall- I think this may be my favorite from the normal Chimay line up.

Served at Bubbles in Tribeca.

Pours red-orange in Chimay goblet. Minimal head.

Smell is banana, plum, clove and spices.

Taste follows smell. Sweet caramel and malts. Cake batter like sweetness. Lots of ripe fruit. Banana and plum predominate. Mild bitterness in the finish.

Mouthfeel is medium bodied and crisp carbonation. Prickly on the tongue and palate.

Overall this is excellent.

Bottle poured at Stubbies in Gainesville. Pours dark with a thick creamy head. Aroma of dark fruits, fig, plum, belgian yeast. Flavor follows with a burst of fruit, plums and figs are prominent, with a nice sweet candy sugar feel and some dryer yeast. This has a heavy mouthfeel, especially for a dubbel. Bit of booze, but in a good way that accents the heavy fruit nicely. World class brew, rivaling the Blue.
