This copper-colored ale boasts flavors of apricots, brown sugar and nutmeg. Brewed since 1982, Chimay Première is the first beer ever produced by the Trappist monks of Notre-Dame de Scourmont Abbey in Belgium.

Although this beer may lack some of the complexity of the blue, and maybe be a little less dark and rich as some other Dubbels, what it does have is some vibrancy in the form of a lovely fruitiness. There are very pleasant notes of apricot jam, some red apple, a bit of breadiness, and some late mild bitterness. The whole package is fairly straightforward, but has an appealing freshness to it. The typical Belgian yeast notes are present, but more subdued than you would expect. Very light notes of banana and clove, and in exchange you get the brighter fruit notes. Pours a chestnut color, with fairly good clarity unless you swirl the yeast into the glass. At 7% abv, this is a nice alternative to the higher abv blue as well. Nice, as always.

Appearance: It has a nice dark brown color to it with nice amber and ruby hues coming through. It has a nice thick tan head that dies down slowly and leaves some lacing.

Smell: The aromas definitly give out hints of yeast, dark fruit, a sweet maltiness and some spices.

Taste: Like the aromas, it has a the yeast and spice character but what i'm really getting are cherries and raisins giving it a nice sweetness with a woody undertone and bready and caramely malts.

Mouthfeel: It has a medium carbonation with a nice sweet overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.

Live review. Bottle from a Chimay gift pack into the Chimay chalice. Slowly gushed after I opened it.

A: Pours a ruddy, copper tinged red, huge 3 finger head stuck around for about 5 minutes before settling into a thin full cap. Not a ton of lacing, but a little here and there. Some oily legs show up on the glass.

S: Classic Belgian yeast, powdery and estery, nice odd toasted bready notes behind that, some dark fruits, and a nicely integrated sweetness.

T: Again, classic Belgian, banana/clove and powdery yeast are foremost, followed behind by a slight sweetness, caramel and toasty malt, and then a light alcoholic warmth. Finish is decently long and slightly dry, but clean.

M: Slightly thin compared to some of the others I've had, but this one is still good. Creamy carbonation.

O: Really, really good. I forgot why I liked this beer so much, now I remember why. Very, very solid.
