Notes / Commercial Description:
From the brewery: This special edition is a full bodied and distinctive strong beer developed within the abbey to celebrate and honour the 150th anniversary of the brewery. Produced with 100% natural ingredients,its pale golden robe and champagne sparkle is topped by a rich white head of foam. The distinctive bouquet evokes the rich fruity and complex notes of the Chimay yeast in harmony with a delicate spicy note and the fragrance of fresh noble hops. At 10% alcohol, the flavour is full bodied and complex with a slight but refreshing tang note and a crisp hop finish that will delight the palate.

Consumed on January 31st, 2016 form a corked and caged bottle. Kept at 50 degrees F since purchase in 2012.

Lightly hazy amber-gold with a fine white head.

Aroma is subtle and a little musty. Almost none of the signature Belgian tripel aromas in evidence (bananas, cloves and floral esthers).

Flavor is muted and I assume faded. I thought a 10% ABV beer would hold up better than this over nearly four years, but this one was probably better fresh. Indistinct flavors are nearly impossible to pick out, but there are some notes of banana and clove.

Mouthfeel is still nicely carbonated but otherwise standard for style.

I never had this one fresh, so I have nothing to compare it to. This rating is only for the one bottle drunk the one time.

Appearance: The cork exploded out of the bottle after a light twist and I thought I was going to deal with a gusher - fortunately not, but it creates a billowy head that settles atop the clear amber liquid; nice retention and quite a smattering of lace

Smell: Banana bread, spice cake, clove, candi sugar, apple and pear

Taste: The candi sugar impact lays down the foundation, with a boozy spice cake aspect building; bananas, clove, allspice and white pepper build, with the apple and pear tones adding another element in the finish; still somewhat boozy after three years

Mouthfeel: Medium to full body with moderate to high carbonation; warmth in the gullet

Overall: For the 150th, they have amped up their tripel and, after three years, the complexity and balance here is quite impressive; I would love to see them do a similar treatment with Chimay Blue

A little spurt from the neck after wrestling the cork out with a loud pop. A snowstorm of fine froth when poured in the St. Bernardus chalice. Rich mouthful of flavor with massively sudsy carbonatio. Prickly and a little tart on the tongue.

Spicy in a refined way. Yeasty tang. Nose of cut apples. Dry yeasty finish. This has the classic Belgian taste. Reminds me of one of the better Unibroue styles. [from notes on Dec. 31, 2012 tasting]

Special edition from Chimay. Well worth the effort! Nicely crafted. Picked from an outlet in Belgium.. Nice tart aroma of hay and licorice. Taste of summer meadow with some alcohol dryness. This is a treasure!

Hazy golden colour, big white head that does not hold for too loong, but leaves a good lace and a ring on the surface. Lots of sediments clearly visible through the bottle. Spicy aroma, with cloves, bay leaf, candy, banana, apricot. Medium to full body, sticky, creamy. Taste is similar to aroma: Cloves, spices, candy,malt, fruits. Special indeed.
