Bières de Chimay

Alcohol by volume (ABV): 10.00%

Notes / Commercial Description:
From the brewery: This special edition is a full bodied and distinctive strong beer developed within the abbey to celebrate and honour the 150th anniversary of the brewery. Produced with 100% natural ingredients, its pale golden robe and champagne sparkle is topped by a rich white head of foam. The distinctive bouquet evokes the rich fruity and complex notes of the Chimay yeast in harmony with a delicate spicy note and the fragrance of fresh noble hops. At 10% alcohol, the flavour is full bodied and complex with a slight but refreshing tang note and a crisp hop finish that will delight the palate.

Bottle from Etre Gourmet. Shared with Jason and Chris. Served in a snifter of some sort.

A - Voluminous white foam settles to a massive, pillowy cap, leaving behind tons of lacing. Hazed peach body.

S - Massive banana and bubblegum esters from the Belgian yeast, with only mild pepper and spice flavors in the background. Some pale malt and stone fruit sweetness supports the yeast, and there's not much in the way of hopping. Unfortunately the alcohol is obvious and a tad distracting.

T - Taste is also heavy on banana and bubblegum, with a bit more in the way of stone fruit and perhaps a touch of candi sugar. Some spicy Belgian yeast and bready flavors round things out, but on the whole quite sweet. Alcohol is significantly better hidden here.

M - Medium body, with a very dry and somewhat toasty texture to it. Perhaps a bit light and watery for the listed 10%. Carbonation is soft and moderate, and there's some definite alcohol warmth after a few sips.

D - I liked this better than a lot of Belgian tripels, as the sweetness comes more from the yeast esters rather than the candi sugar; as a result it's not overly cloying. Definitely a slow sipper at this point though as there's plenty of booze present, but should age gracefully for a number of years. Quite a bit different from Chimay White and more in line with my taste preferences.

Oooh! Special and Chimay! Two of my favorite words. :) Lots of carbonation, it pours a pale straw color with a very active white head. The smell has more pronounced citrus than any Chimay I've had before. Oranges and sugar and lemons. I think that's what someone is made of but I've drank since then. The taste is UNBELIEVABLE! Oranges, biscuits, a little pepper, a little caramel, a hint of wood. It's like a rustic grocery store in a bottle. Mouthfeel is tingly and slick. Like me after I've finished this. Wow. Truly stupendous, the best Chimay I've had.

14th Dec 2012: the day before the annual Christmas Beer Festival in Essen.

The Oud Arsenaal in Antwerp is where a few regular fest goers have a pre-fest meet-up: this is where my wife and I shared a 0.75 bottle of this fine beer with each other.

Mini-haze to our golden/pale amber bodied beer, the head a full foaming covering of white bubbles.

The nose was a true mixed bag of goodies: yeast, fresh fruit, candid fruit and spices.

The taste was also an eclectic blend of flavours: too many to list, but full of interesting notes to find and enjoy. OK, I'll list a few things I found: earthy yeast, pepper, biscuity malts, citrus hints, wood and nuts.

Loved the whole thing.

Pours a hazy pale yellow with a white head. In the aroma, a nice candy sugar dryness. In the taste, a nice candy sugar dryness and a nice yeasty presence. A small bite, but mainly smooth, with a medium bodied mouthfeel. A dry candy sugar and almost fruity like aftertaste. Dry yeast, small fruitiness, and somewhat basic, but quite nice.

The beer pours a very strong and vigorous white and creamy head. the beer itself is a slightly hazy and slightly clear gold.

A bready/grainy smell with banana and a touch of the alcohol as well.

The beer tastes as it smells and it is delicious! The tastes are complex and varied. Chinay's yeast strain (banana) combines very well with the bitter hops and a bit of alcohol mixes as well. The other flavors include honey, a bit of sugar, and a hint of clove.

Biting carbonation in a medium bodied beer. The beer itself feels pretty smooth.

A very good triple and definitely complex. I'll probably pick another bottle of this when I can. This triple is very different from their usual and recommend drinking at least once as long as it lasts.
