Poured from the bottle into a tulip glass. Bottle dated Jan 2009. Minor pop off the cork, a hint of gas hiss just before the cork is dislodged, and a nice smoke.

Deep dark red almost rust body color, with a bit of muddy opaque color but does have a good red glow slightly. Lots of fine carbonation, and a slow decant is a controlled fine bubbled pink head. Any minor excess pour creates a huge, and I mean HUGE head gush and creation. The head at its light pink though dissolves very quickly with snapping carbonation. Quite interesting behavior on a brew. Head dissolves entirely, to a micro ringed collar, and there is a verocious volcano top that jettisons out the bubbles to the edges which is worth the price of admission itself right there, like bubbles racing on a red ice skating rink. This is really neat looking.

Aroma is big on earth funk and juiced raspberries. Mild almost sage like herbality coming with some of the raspberry sweetness but the nose really can't get away from this earthy funk. Hard cough drops with a menthol like action on the fruit, but then interestingly leaves a muddy soily bent when done. This is real impressive stuff.

First impressions are down right excellent on first sip. Earthy flavors with moderate soft acidity, but also a bit of a body that might have gone just a bit past prime. Weird texture, highly carbonated but not fizzy feeling, and an almost toothpaste like feel. Earthy raspberries with lots of soil richness in the mid palate. Finish is excellent fruit tartness, and this lingering soft menthol and mint to sage herbal finish. Fruity raspberries galore and all over.

De Cam to me seems to manage hotter lambics, and this is much softer but still really does give a good yeasty punch of flavor. Still the fruit is very present and everything is really complimented excellent. Great fruited lambic, but with much time since bottling it's pretty obvious this has changed quite a bit. Luckily it's an excellent brew.
