Pours a hazy deep copper with a huge rocky ivory/light tan head. Very lacy, lots of tiny intricate lacing up and down the glass. Smell is very yeasty and spicy. Sour apple and just a bit sour overall.
The taste is just fantastic. Sweet and spicy (ginger, peppery). yeasty with sour plum and sweet pear playing off each other. Bready. Lightly smoky with hints of peppercorn. almost reminds me of smoked salmon way back there is the flavor profile. Some alcohol in the finish as it warms. Very creamy in the mouth then bites a bit down the throat. But goes down so smooth. I spent all night getting to know this one and I am just so happy I've got two more in the "cellar". Grab it if you can.

750ml bottle cellared on it's side.
Pours cloudy amber with barely a trace of head and zero retention. Cloves, apple, and raisins in the nose. Medium bodied with a slickish mouthfeel. Sweet malt with shades of raisins and spice. Finishes with fading raisins and spice.
Not terrible for a beer almost 15 years old but it was never exceptional when it was young.

Bottle shared by Todd last night.
Slightly hazy copper brown color with a smallish head that dissipates quickly. The aroma is filled with overpowering spices atop a faint brown sugary caramel malt base. The flavor is not a bit different. Medium to thick body with a light to moderate level of carbonation and a sweet spicy mouthfeel. Not bad for a ten year old beer, but too heavy on the spicing for my tastes.

Sample: 1 bottle 2004
A: Burnt orange in color, cloudy throughout, pours with no head, no lacing, no internal carbonation, certainly a few years peaked
S: Moderately fragrant with a rather fruity aroma, apple juice comes to mind, some pepper and herbal elements exist as well, quite yeasty
T: Flavor is incredibly subdued, fruity and yeasty, but missing something, very slight alcohol but almost not even present, definitely a shell of what this ale used to be
M: Like drinking juice, amazingly drinkable, like water on the palate, extremely mild fruity aftertaste, not lingering or drying
O: Unfortunately this beer has seen better days and peaked a couple years ago, but an interesting experience needless to say, unbeatable mouthfeel given it abv

Thanks to jjfoodie for sharing this bottle. The beer pours a yellow color with a white head. The aroma is heavy on the Belgian yeast, with some wheat and assorted spices thrown in. The flavor is similar, with a strong yeast component. I also get some nice pepper and spice notes, as well as some floral and rose notes. All of this is mixed in with some biscuit and wheat notes, as well as a good dose of alcohol, Medium mouthfeel and medium carbonation.
