Purchased this bottle in September, 2008. Sometimes there are bottles in my cellar that are marked "special occasion," and end up achieving almost sacred status to the point that I second-guess any potential occasion to open them. And sometimes, it's simply necessary to say, "what the hell" and open those bottles up.
My 2008 bottle of Quatre-Centième was one such of these, which, after staring at me in the fridge for 7 days (after having stared at me in the cellar for 12 months), finally won the battle of wills tonight. Glad I opened it. It's a delicious beer, not a holy relic.

The nose is subtle but bright hominy with a faint earthy spring grass hint that was probably more pronounced 5 years ago.

The taste is wonderful in an understated sort of way. Balanced, warming, with just a miniscule hint of musty-farmhouse sourness at the end. Delicious.

PLENTY of carbonation remains after 5 years, and it's pleasantly scrubby and spritzy on the palate.

A winner with food (Thai/Vietnamese, as long as not too spicy, OR artisanal cheeses and charcuterie) or all alone by itself. I'm sad I only bought one bottle of this 5 years ago.

Minimal head that dissipates quickly. Cloudy, boggy orange color. Smells like a Christmas cookie when swirled in the Tulip glass. Brewed in 2008. Maybe this beer, which I bought this past Monday, shoudln't be on the shelves. I don't think it's the style of beer I object. Beglian Strong Pale is my favorite style just about. I think this brew is past its prime. So if you're a time traveler (sorry but I stayed up late to watch Interstellar last night) and you can use a worm hole to jetison back to 2009, by all means buy and drink now. But if it's 2015 where you are as it is where I am, DO NOT BUY. I never pour beer down the drain. Until now.

Bottled 2008 and consummated 2015 one may think that it had lost its charm but this had plenty of carbonation and flavor.

The nose was a bit spicy, almost peppery, with some yeast, esthers, bubblegum and Apple cider.

The flavor came across with a strong Apple and light yeast characteristics. There was a touch of banana and wheat malts but the Apple remained throughout. Crisp yet dry this was a fabulous surprise.

Fairly estery and spicy. It's a bit of a blur from a night of bottle sharing. Good yeast presence, but any hop character has faded. Malt is complementary.

11/21/13 From bottle at Rattle n Hum, NYC. Dated 2008. Consumed 2013. This has to be one of the finest beers I've ever had. Bar none. Please tell me I don't have to wait until 2018 for another! Where do I start? Aroma? Nothing outstanding but appealing nonetheless. Pour? head was a bit shallow & lacing practically none existent. But just wait until this hits your tongue...smooth, lovingly sweet yet bitter. A love affair from the first sip. seek this out if you can. Otherwise wait til 2018. :^(

I am sampling a 6 year old bottle that has been in my cellar since its purchase.
Pours a clear copper hue with fizzy bleached white head that foams up 2 cm and fades to a sturdy edge layer and a few wispy islands. A little slow gush of foam on the opening.
Aroma is white wine grapes, biscuity malt and a pretty good boozy dose. Aroma is complex and appealing, definitely has a vinous quality to it.
First sip reveals an average to light body with very fine fizzy carbonation that tingles on the palate throughout the sampling.
Flavor is some white grapes and pears, fairly sweet overall and the booze that made a showing on the nose is nowhere to be found on the flavor.
The beer is very smooth and easy to drink, flavor is complex yet light and airy.
I am enjoying this and wish I had an additional bottle in the cellar to share with good friends.
IF you have any of these bottles aging, it is probably time to drink now and enjoy.
