Notes / Commercial Description:
Another offering from our “Bones” series, featuring the fermentation of fresh fruit. In this instance California white peaches from Sanger, CA are fermented with a brett’d saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction. Santé!

A great aroma of just ripened peaches, sour,funk,yeast, and malt
Taste was real,not artifical or sugary peaches. Mixed perfectly with some sour funk, mild sweetness.
Will definitely pick up another bottle when I see one

Pours a mostly cloudy yellow color with a finger width foamy head. Head retention is good as is lacing. Very peachy tart aroma. Nice tart peachy taste. Fizzy, light bodied with heavier carbonation.

Pours a slightly cloudy yellow-orange with a thin white head that dissipates very quickly to a ring and leaves decent lacing. Smell is on the mild side with unripe peaches and a bit of funk. Tastes of sour, unripe peaches, lemon, sour white grapes and a bit of biting funk. Light bodied, well carbonated, slight tingly burning sensation on the lips and tongue, dry finish.

This one pours a light and slightly hazy orange color, with a small head, and lots of lacing.

This smells like lemon candy, candied peaches, sour peach skin, white wine, and grape.

Most of the Barrelworks stuff is quite good, and this is no exception. There's a nice light sweetness here, and it plays off very well with the very sour peach/lemon/white grape flavors you get. I don't get much barrel or oak, just a touch of white wine, maybe. It's fairly sour, maybe 7/10.

This is light bodied, crisp, and ultimately fairly clean, with a great level of drinkability. It's got a very effervescent feel to it.

I'm not sure if this is as good as Krieky Bones, but it's still a real treat to be able to try.

2018 Vintage
375 ml bottle

Appearance: Slightly cloudy straw-yellow color with a generous sized foamy white head that slowly faded with nice lacing. A great looking beer.

Smell: Mild barnyard funk with unripe peach notes also present. I also pick up some mild leather and tobacco notes.

Taste: Tart peach notes, mild barnyard funk, mild tart citrus along with some mild hay-like notes. Balanced towards the tart side rather than sour side on the sourness spectrum. The finish is dry and clean.

Mouth-feel: Light-bodied with a generous level of carbonation. The mouth-feel is spot on.

Overall: Another good Barrel Works wild ale. A very nice treat.

i dont know about this one, for me it was highly anticipated, but it seems sort of dumbed down from some of the other wild firestone stuff, almost a more mass produced vibe, as much as i hate to say that with something like this, its really true, with an almost one dimensional bacterial acidity profile, and very little truly wild funk to it, which is a major regression from some previous releases, and not at all what i was expecting here. its lactic and fast, almost crisp in a sour sense, not funky, bretty, woody, or mature in any meaningful way for me, which is a serious let down. the peaches are fine, but to me even behind the acid, lemon notes highlighting the sweet flesh, but its fermented down to close enough to dry that its not the full fruit, not unnatural or anything, but it not all there for me. a slight white wine note, might be from the barrels, but this doesnt have the woody depth or complexity i was looking for from it. mineral, apricots, tang, its something i have tasted a million times before, and as such, less special than it should be, especially considering the trajectory of the series and the price point. great beer by any measure, but well under what it should have been from these guys. had on tap, ill try a bottle to compare. hopefully not a sign of things to come from these guys, this seems juvenile and almost inferior to me, but i will reserve judgement until i get a bottle...
