Imperial Stout aged in Scotch Barrels- The base beer is our Parabola and matured for three months in Single malt Scotch barrels from the Distillery Ardbeg. This distillery is located in the Islay Region of Scotland, which is known to produce some of the world’s best high peat Scotch. The Ardbeg 10-year-old was voted “2008 Whisky of the Year” in Jim Murrays book “The Whisky Bible”.

This is a great beer for scotch drinkers. It has an exceptional scotch whisky aroma and taste, mixed in with that excellent Parabola backbone. Can't get much better than this.

Got to try this at the 2018 EBF. I had to go back for a second helping! You know...for research purposes, you understand. This brew tasted and smelled of a nice, peaty Islay scotch. Nowhere near as strong as Ardbeg, whose barrels were used to finish the beer, but enough to balance the characteristics of both beer and whisky.

This beer starts with huge peat and smokey aromas so if you don't like your scotch peaty, you won't like this beer. For me, awesome! Anyways, thick, chewy, heavy feel to it followed by a warming because of the gravity. Rich malty, chocolate and sweet taste underneath a huge smokey flavoring. Finishes smooth and warm, excellent beer!

Sample at Mikkeller Beer Celebration Copenhagen 2018, Gold Session. Dark brown color with tan head. Aroma has intense peated wood, campfire notes, ash and a bit of rubber. Taste is sweet, malty, smoky with quite intense peated notes, bitter earthy/woody finish. Medium body and carbonation, feels quite thin.

Quite possibly, the most perfect beer I’ve ever tasted. It’s the boozy Parabola sweetness married with a smoky Islay Scotch flavor that I love. The aroma is so complex and heavenly, toasted vanilla marshmallow sweetness, peaty smokiness with layers of molasses, sweet brown sugar and touches of iodine seaweed and oak astringency from the barrel. The thick, chewy, viscous mouthfeel coats the palate and ensures you get every nuance of flavor and aroma. Thanks, Firestone Walker.

12oz bottle into Firestone Walker Teku. Pours black with mahogany edges. Half finger of light khaki head dissipates quickly leaving only a ring on the edge of the glass. Nose is smoke, peat, caramel, dark chocolate, salty brine. Lots of milk chocolate sweetness and carame up front give way to layers of smoke, earthiness, and a ocean brine salinity. Bitter smoke leaves the palate dry after a long linger. Mouthfeel is above average bordering on exceptional. Sure if you don’t like Islay scotch then this version of parabola may be challenging. To me it’s an exceptional marriage of stout and barrel and unlike anything else currently on the market.

Pours a dark black just as you would expect for Parabola. But that is where the similarities end. The scotch smell and taste are not for me, and I general like Scotch.A tad bit thin on feel. Not a fan.

I just can’t handle the aging from the Scotch barrels. If you are a scotch lover, I suppose you could love this. Some might view this as a ridiculous review, but the scotch was overwhelming. I love the base beer in almost all of its forms, but it was hardly recognizable from the overwhelming peat/smoke scotch barrel.

On tap at Pittsford Pub in Pittsford, NY.

This one pours a very dark black color, with a minimal head, and not much lacing.

This smells like rich woody smoke, peat, brine, dry bitter oak, chocolate-covered espresso beans, booze, and roasted malt.

This is exceedingly intense, and I could see this being quite polarizing. The scotch barrel lends a ton of flavors here, it's briney, and almost fishy, which is weird to me. There's a lot of woody and earthy smoke, with a big drying oak character, and lots of peat. Luckily, however, the intense barrel notes do not overwhelm the delicious base stouts, with presents a concentrated dark espresso flavor, and lots of fudgy chocolate, with a hint of pleasant roast.

This is medium bodied, chewy and rich- much more substantial than actual Parabola has been since the move to 12 oz bottles. There's a lower level of carbonation.

I wasn't sure how I'd feel about this one, and I'm happy to report that I love it. It's certainly big, and there's certainly not something to drink if you don't like Islay scotch.

Pours a black color. 1/4 inch head of an off-tan color. Decent retention and slight lacing. Smells of wood, peat, smoke, sweet malt, and a hint of alcohol. Fits the style of an American Double/Imperial Stout. Mouth feel ia smooth and clean, with an average carbonation level. There is a slight alcohol metallic twinge and smoky bite. Tastes of smoke, sweet malt, peat, wood, hint of hops, hint of chocolate, slight alcohol,and a hint of syrup. Overall, besides a weak appearance it has a great smoky aroma, body, and blend.
