Drie Fonteinen Lambik, served by Armand, off his barrel.

This was brewed by Armand, one of his last barrels of lambik he produced in existence. It was an absolute treat to drink this. To date, it's the best lambik i have ever drank. Full of aroma, sourness, and full of flavor. It's extremely layered and complex. I can now understand why a lot of people consider Drie Fonteinen to be amongst the best lambiks in the world.

He also has other lambiks, brewed by Frank Boon, and Girardin to his recipe. They're quite good, but not as stellar as Armand's lambik.

Sampled at the Drie Fonteinen Cafe, 2001
This was the second straight Lambic that I had ever had, it was again far mellower than I was expecting. Of course it was 'sans-carbonation' (say it with a Cajun man accent its much more fun that way) and had a quite noticeable acidic aroma. The acidity promised in the nose was surprisingly subdued in the taste. It was much more of a balanced / mellow acidity, which I am surmising, was the result of a bit of age that helps to smooth out Lambics. The beer itself was quite a revelation. There was a fair amount of musty character, and an appetizing hint of mushroom and a bit of character nabbed from a proper strong stinky farmhouse cheese. All in all it was a great aperitif for the impending gastronomic exercise that I was about to have.

Bottled oude lambiek brewed March 28, 2000. Opened early 2011 from Tom Peter's private stash. One of six bottles that Armand bottled just for Tom and Monk's.

A: Hazy light orange body. Completely still, no head, no lacing.

S: Massive earthy/woody aromas dominate. Light sweaty component, some acidic lemon, and a subtle wet hay.

T: Like the nose, a very earthy/woody profile. The 11 years in the bottle has really created a softened, delicate lambic. A real treat to try a straight lambic with this much age.

M: Completely still. Slightly acidic, no real sour puckering. Medium bodied.

O: I have never had a lambic with this much age, and it was nice to explore what time in a bottle does to drie fonteinen lambic!

sampled on cask at the brewery's restaurant. dark orange in color with a nice, thick head that lasts. smells tart and sweet, complexities showing immediatly. beautiful balance of sweet and dry flavors. finishes with a tartness, and dry enough to make me want more.

Cask glass at the Drie Fonteinen restaurant in Beersel. From notes.

A - Poured slightly hazy with a copper colour and no head or carbonation which is probably correct for the cask serving.

S - Hay, grape skins, mild aroma after those notes but I also got some musty, pissy, and vinegary notes.

T - Aggressively sour. Vinegar was obvious. Ditch? Some sort of fruit was noticable and a lemon candy taste was there. Many layers made this very interesting.

M - Stings the tongue on the front right away. Sour in the back as well. No carbonation and a mild to medium body. Slightly dry finish.

O/D - A good Lambic. The aggressive sourness might be an issue for more than one or two but it was still quite good. Refreshing and tasty on a lovely Summer day in Belgium. Very complex.

On cask at the Drie Fonteinen lambic room during last week's Belgium trip. Reviewed from notes.

Served in a Drie Fonteinen stange.

Poured a fairly clear moderate orange color with a few bubbles but nothing much else.

Nose brought forward a good dosing of funk, light cheese, and a bit of citrus. Nice combination at this stage. Everything was beginning to meld. Good funk throughout. Light acidity in the flavor after some funk and must.

Light body with just a touch of carbonation and a light bit of acidity. Very tasty.

I couldn't have asked for a better beer after that long walk in the rain. The Drei Fonteinen's young lambik poured a pretty amber color with a thick and creamy white head. Carbonation was almost non-existent and the beer had a generally flat appearance aside from the froth. Vinous aroma that isn't shy on woodiness. Tart and dry with white wine and lactic notes. Balanced and easy going with a touch of citrus flavor in the finish.
