At the Ravens and Lambic event at Max's today.

Golden clear with no head or lace, this doesn't look like much. The nose is actually pretty enjoyable. Lemon and tea are most noticeable, there's a herbal tea tannin character with mild spices. The kombucha contribution is rather noticeable. As it warms up, I get some spruce and juniper, this is mildly gruit like. The palate is the same, with more tea tannin, bright sour lemon and a drying finish that's got herbal tea and lemon peel. Light body, moderate carbonation, the finish is drying and tart. Solid stuff, this is pretty darned refreshing and quenching. I would drink this again.

Immense thanks as always to ShogoKawada for sending on the goodies. Poured from a 750mL bottle into my Drie Fonteinen tumbler.

Jonquil body with a big active papaya whip head that recedes to a fine lasting collar and faint isles of surface slick.

Pungent kambocha tartness in the nose, joined with a cellar-like aroma with attic/cobwebs/penicillin. Strongly aromatic - paving the way for a flavor bomb.

Lemon, kiwi, raspberry seeds, and sourdough on the palate. Simple but enveloping. No hops that I can detect, as you would expect I suppose. Tart throughout with a mild funk into the finish. Extremely refreshing with hints of lychee in the aftertaste.

Light bodied, crisp, and spritzy...though faintly oily as well.

I didn't think this combination would work as well as it does - the elements of both beverages are largely preserved and retain their own qualities while the combination is quite distinctive and ingenious. I generally hate when brewers really mess with tradition, but it's hard to find fault with this one.

Poured from a corked and caged 750 mL bottle into a Brewer's Art goblet. Moderate hand. No clear date seen.

A: Pale, golden yellow body with surprising clarity off the top. 1 finger of fizzy, white head that quickly dissipates. Gets murkier as you work down the bottle. No lacing of note.

S: Kombucha tea with musty, fermented notes. Herbal. Grass. Honey.

T: Assertively sour initially with a marked kombucha presence. Becomes rather dry mid-way and closes out as such. Herbal. Lemon. Citric acid. Lingering earthy tea tannins in the aftertaste. No alcohol presence, as expected for 3.5% ABV.

M: Moderate carbonation with a light body. Effervescent and refreshing.

O: Think Berliner weisse plus tea leaves and you're partly there, but mostly this one tastes like kombucha with extra carbonation. Great if you want some kombucha, less great if you want some beer. Admittedly, its beer-like properties grow towards the end of the bottle. And I like kombucha.

I've read about this brew many times, and have always wanted to try it. Poured from a 750 ml. bottle into my Russian River glass.

A: Pale straw yellow with a slight haze, with a thick white head that settles slowly. Actually reatins head better than other sours I've tried.

S: A bit of musty funk, with lemon notes and some herbal character.

T: The tea is prominent up front, with some herbal quality and a bit of tannin, while the mid-palate is tart, somewhat funky and slightly grassy. The finish is quite dry and crisp.

Notes: Light to moderate in body with a very clean mouthfeel. It's tart, but not overly so like some younger Lambics tend to be. Very refreshing, and although a bit pricey, It's a perfect sipper for on a hot day. Reminds me a bit of sumac tea. Definitely worth trying.

Sour gruit, anyone? Interesting experiment, though I don't know the first thing about fermented tea. Oddly enough, I pick up neither tea nor lambic. Sure, it's sour. But it's not so wild. More of a clean sour. Mineral driven as well. Clean + mineral reminds me quite distinctly of a goze. And it's quite refreshing in that regard. I wouldn't mind a little tannin to contrast w/ the acid, but the tea brings none of that to the mix. I also wouldn't mind a little funk, but the lambic brings none of that either. What you get is an easy drinking, non-offensive, low ABV brew. Keep the experiments coming!

As an addendum, sure seems like there's a lot of bottle to bottle variation based on the reviews. Some call this very funky, and others non-buggy. Maybe it's a reference issue, or maybe the yeast and bacteria were not well distributed prior to bottling. I wouldn't mind finding a funked up version of this myself.

Shared with a few friends on a Friday night. Pours a fairly clear pale golden color with a decent white head that shows moderate retention. Smells of tart and funk, no really. Lemons and yellow mustard mixed with truffles and barnyard. This is quite an odd aroma, but it kind of works. Taste is tart funk with a nice puckering of lemons dominating the flavor. Earthy barnyard mixed with fungi round out the flavor. Medium body, spirited level of carbonation and a puckering tart mouthfeel. I enjoyed trying this, but I couldn't see me drinking more than the 6 or so ounces I had in one sitting.

750 ml bottle split with onix1agr.

A- three fingers of loose billowy bright white head that settles quickly to a sparse cap. Slightly hazy straw yellow in color that shine in the light.

S- dusty funky barn yard that's for sure. Very crisp and mildly tart. You do get a bit of the tea, I drank a kombucha earlier today its kinda cool that the smell is in there.

T- mildly sour and tart with lemon zest and miniolas. Nice powdery wheat hits with some juicy green apple. Simple but nice.

M- light body and medium to high in carb. Very clean finish, nice light pucker.

D- very easy drinking mild as far as sour and not to buggy. Nice light stuff. I like it. I'm interested to see what else the can do with this idea.

wow. great concept. avante guarde and it works for me. hazy burnt gold with some glowing pink highlights. white head that fades pretty quick. Nose is barn, wet hay, lemon, preserved lemon, lemon rind, grapefruit, spice, minerals... sort of like a lambic, but sort of like something else. this is a very tough beer to review, and it must be even harder for people with no experience with kombucha. taste is tart/sour preserved lemon, wet hay/ barn and kombucha. perfectly blended to me. very good job. the line is blurred between what is beer and what is "tea" (or adjunct), and generally, that is the point in specialty/adjunct beers. light-medium body that seems beefed up by the prickly carbonation. supremely refreshing and super easy to drink. think gose, geuze, berliner-weisse with a little twist. great value as well as being a little milder than some of it's relatives, leaving your palate craving for more abuse. it may sound strange, but this beer reminds me of Miles Davis' Bitches Brew. It may seem harsh and biting to someone that doesn't know what they are getting in to, or to a mind that isn't open, but the raw, primal, living essence and soul of this beer speak volumes about where we've been and where we're going. extremely complex and flavorful for a beer with such a low abv. i'll be drinking several of these this summer. AND>>> I agree about this beer being classified wrong. NOT just an unblended lambic. way way way more.

Poured into CCB snifter.

Pours a fizzy white head that fades down fast. Color is a clear golden orange.

Aroma: Some sour notes and oak. The tea flavors are unique, but I like it. It has some hay and barnyard funk to it with slight lemon flavors.

Taste: The funk flavors meld really well with the tea. Some light oak and light medicinal taste.

Mouthfeel: Tart and mouth puckering. Medium bodied with a low to medium amount of carbonation. Ends crisp, a bit dry.

Overall, this beer would be great on a hot summer day. Very refreshing and drinkable. I enjoyed this one.

750 mL bottle,

A: Pours a hazy goldenrod with a light white head, no lace.

S: Dandelion greens, fermented vegetables, earth.

T: Sauerkraut juice, lots of lemon and funk, good flavour.

M: Light-bodied, crisp, quite acidic, a direct blend.

O: I like lambic and Kombucha, so I was very exicted to try this. It is a very interesting hybrid, the acidity is very good, for fans of the 2, I'd say get a bottle.

i think i sat on this bottle for about 6 months

more so lambic yeast dominanated than kombucha and bone dry. very light in color coming in light yellow orange.. nose is crisp ashtray sour with what smells like tire inter tubes when still. mineral bare bones. palate is dry and hunger inducing. wondrous for such a low abv and of rather high standard. a sour most.

A- Pours a light golden orange color with a bit of hazy. White head that has very little retention and leaves no real lacing.

S- Probably one of the oddest smelling beers I've had. Smells of a bit of sourness not too much at all, some fruity smells, and tea. I guess not very "beer like."

T- Again, quite odd. Not really feeling a beer here. A bit of light fruits and very tea like.

M- Light in body and fairly high carbonation.

D- Pretty different here. Glad I got to try it, but I don't think I'll ever have this one again. Its easy to drink just not my thing.

75cl bottle poured into several tulip glasses. A big thanks to Tony for opening up this beer late into a great May tasting.

It pours a hazy golden straw with a bright white head that lasts for a while.

The smell is one of the most interesting things to pass over my nose. While I've had a lot of lambics and drank a lot of tea I am completely unfamiliar with kombucha but very interested. This smells just like it should. It's as if a straight lambic and a black tea got mixed 50/50. It's almost impossible to grade it according to a style but it's totally up to personal preference. In this case I'm all over this blend.

The taste is an intense grapefruit/lemon tart and sourness. There is just a ton of lemon taste to this beer. The tea influence then becomes noticeable. This beer just is the most interesting mindfuck of a beer I've ever had. These two fermented beverages blend perfectly in my mind and I absolutely love this beer and think this isn't the last you see of beer and kombucha blended together.

Note: While others have reviewed this as an Unblended Lambic, this beer is should not be categorized as such. First, it is blended; Second, it is blended with Kombucha (fermented tea), not another lambic, not fruit; which IMO makes this beer more appropriately categorized as a Belgian Specialty Ale. My review was conducted as such.

A- Poured from the bottle with a diffuse white head, which was reasonably retained. The body was almost completely opaque with haze, and otherwise a strong yellow color. No visible carbonation.

S- A pungent nose; ripe with phenolics and esters of wild yeast. Impressions of wet hay, barnyard, and wet tea. Subtler impressions of fermented lemon rind as well. Intriguing... and wildly intense aroma for a 3.5% ABV beer!

T- Strong flavor, despite the fact that this beer was served cold. Starts out with flavors of wet hay, which are quickly overwhelmed by a lactic tartness midway... which ultimately finishes somewhat acetic. The finish is short-lived with a mild vinegar and citrus character. Overall intense, yet oddly "bright" and "clean" in flavor.

M- Would be a thin body if it weren't for the pervasive carbonation, which bumps it up to medium body. The carbonation is so plentiful that this walks the line of "bloating", without ever crossing said line. Moderate astringency here. Overall, this mouthfeel works well with the aroma/flavor profile.

D- Wonderfully tart, crisp and refreshing on a hot summer day. Very drinkable, and AMAZINGLY rich in aroma/flavor for such a low alcohol beer!!!

A: Pours a clear pale yellow in color with light amounts of visible carbonation (though it is cloudy when you get to the yeast in the bottom of the bottle). The beer has a finger tall fizzy white head that dissipates to a thin tiny patch in the center of the glass almost immediately. No lacing is observed.

S: Smells of brett and very similar to plain kombucha - lightly funky and lightly sour. There are also some light floral/citrus hints.

T: Very similar to the aroma though I also get some light hints of ginger ale/ginger beer. I feel like the flavor of the kombucha is pretty dominant in this offering, with the brett coming through though not as strongly. There is a very enjoyable lingering citrus tartness/sourness.

M: Light bodied with significant amounts of carbonation. Crisp and effervescent.

O: I really enjoyed this one but I am a regular drinker of kombucha (something that you can definitely tell is an ingredient in this beer). Very light and refreshing, I could drink this one all day long.
