Notes: Beyond Good and Evil is one of Nietzsche’s most powerful works, challenging conventional wisdom and urging us transcend good and evil while confronting the very nature of knowledge. This challenge both informs and inspires our work.

Beyond Good and Evil is also the name of our bourbon barrel-aged maple imperial sweet stout. Brewed in May of 2012, we crafted this beer with a touch of Vermont maple syrup and then allowed it to rest quietly and contentedly in hand-selected bourbon barrels for over 18 months.

This is an interesting beer in an interesting category. Basically a chocolate and maple bomb, supplemented by some decent bourbon heat but not as much bourbon flavor as I usually like. Oak comes out more. Milky and rich with toffee, caramel, and slight molasses flavor. Not much roast or coffee and slightly thin on the mouthfeel.

Hard to rate for me. Basically liquid chocolate bourbon maple candy. Very sweet but not as cloying to me as Chocolate Rain or Black Tuesday. Delicious in its own way but the sweetness and lack of bourbon and coffee/roast starts to take a toll. Gave half to my wife after an initial attempt at taking it to the face. IMO, far better than the Faystons I have had but not in the same realm as beers like Maple Bacon Coffee Porter and KBBS. Have not had Mornin Delight but doubt it approaches that either from the reviews. Definitely worth seeking out but definitely best split with others.

375ml bottle, 2018 release, poured into a Hill Farmstead oversized wine glass. Enjoyed on 06.09.18, reviewed from Tasting Journal.

The beer pours a jet black color, thick and oily, very viscous with a thin tan head that has no retention nor any lacing. The aroma is pleasant, lots of rich maple, sweet and sappy, tons of fudge brownie, light stone fruits, oak, bourbon, toffee, dark grains with a lingering marshmallow vanilla fragrance. The flavors are very good, intense fudge brownie, lots of rich dark chocolates with some underlying sweet maple, oaky bourbon with a nice vanilla sweetness, char and roast with brown sugar that plays well with the maple and finishes warmly with a light fruity acidity. The mouthfeel is great, coating medium/full body, not quite chewy but very smooth and gentle, velvety with an effortlessly easy finish that has nice legs and a warming sensation.

Verdict: A very good barrel aged imperial stout from Hill Farmstead. Rich flavors, balanced well that is very easy going. The maple adds a nice amount of sweetness to the beer but it brings with it some nice depth and complexity.

Bottle from jbeatty a while back. Cheers man! Always happy to see some HF stout brew.

From a 37,5 into a snifter.
Bottled January 2014

APPEARANCE: An opaque black pour yields a two finger, medium-thick, creamy, light mocha head with great retention. Pitch black body and basically no carbonation evident. Head slowly fades to a full, creamy wisp. A splotchy wisp and ring remain leaving dots of lacing down the glass. Classic HF stout look. Excellent.

SMELL: Bourbon, oak, vanilla, coconut and maple syrup for sure. Bold and intense. A bit of milk chocolate as well. Impressively bold nose.

TASTE: Maple syrup and bourbon up front with oak and more sweet maple at the swallow. Big and boozy finish of maple syrup, bourbon, oak, vanilla and milk chocolate lingers on the palate. Bold and boozy for sure, but still lots of sweet maple and barrel flavors are there. Good, but boozy stuff here.

PALATE: Thinner body with slightly higher levels of carbonation. Prickly on the palate, goes down fine with a scratch and finishes sticky on the palate. Some heat lingers.

OVERALL: This is good, but it's slightly too light on the palate and a touch boozy for top marks. Very barrel heavy for sure with a decent amount of maple syrup. Little base stout left, unfortunately. Good, but not great. Cheers jbeatty! Love seeing these guys show up on my doorstep.

Second time having this brew. First time was at the anniversary at Blackback on draft.

A- Poured from the 12oz bottle to three snifters. Thick, pitch black body with a light brown mocha cap rising up to half a finger. The frothy cap falls to a medium ring and spotty lace results.

S- Bourbon jumps out of the bottle as I open it and I can smell it from several feet away but a closer inspection brings on a deep sweetness along with decadent chocolate and malts. Dark cocoa really comes through with heavily roasted cereal grains to compliment the barrels.

T- The barrel feel in this beer reminds me of the other dark Bourbon ales from HF because the extended aging really relaxes the barrels pungency but a ton of quality wet oak and whiskey vanilla comes out. Deep cocoa mixed with the maple brings on the character of a decadent brownie or truffle of sorts. Just a bit raisiny and charred.

MF- Very thick bodied with a low end carbonation. The consistency overall is oily slick and silky with just a bit of creaminess. Finishes with a soothing warmness while big flavors linger for quite a while.

Big deep chocolate roast malts with plenty of balanced out barrel feel. The maple comes out with an earthy sweetness and some flavor but certainly not CBS level or overpowering in any way. Continues an excellence by HF using barrels with dark beers (BoT, BA Everett, Daybreak).
