Notes / Commercial Description:
Being and Time is our first spontaneously fermented beer in January 2011 we brewed this simple wheat based worst, and slowly cooled it, over night, open to the ambient Greensboro air. Fermentation in oak barrels slowly followed, with the presence of nothing more than what our environment dictated after more than 28 months of evolution in the self same barrels, we are proud to release an exceptionally unique representation of our landscape.

375ml bottle at Koelschip. Brewed in 2011, it spent 28 months in a french wine supposedly neutral barrel, brewed on a lambic way but with fresh hops rather than old ones (I couldn't get more of an explanation from Shaun Hill).
A: Orange copper, no foam to speak of. Very clear appearance.
S: Smell is really focused on the barrel, reminiscent of Ann, of course without the saison character, wine, oak, nuts, some funk and strong acidity.
T: Taste is also winey and nutty, with kind of a vin jaune character. There is a good amount of acetic acid but also typical US lactiness. I don't think the barrel really was neutral because it seems like it gave a lot of character to the beer. Yet, it has a very clean palate. Very nice brew.
M: Almost flat but still crisp. Quite smooth mouthfeel.
O: I wouldn't say this really is lambic. Imho it's something different, but it sure is a really good treat. I'm glad I have had the opportunity to try it.

A glass of Heidegger straight to the dome. This has been on my list since it did not make the cut for the Collected Works (RIP).

Full 375ml bottle (brewed, 2011), poured into the classic HF stemware. White bubbles dissipated quickly, leaving nothing but a translucent, copper-hued liquid; appearing still in the glass but full of carbonation. The smell had all the right attributes - musty funk with a lemony sourness. Nothing out of the ordinary.

The first sip was quite sour but approachable, maybe nostalgic, for anyone familiar with older Cantillon. Slick mouthfeel after the carbonation withdrew. As it warmed up, I found a slight oaky buttery/nutty flavor; mid-palate. Nothing unpleasant but it's what made it more unique in character. Left a clean finish. Still, I tried looking further beyond the usual sour/funk combo to something undoubtably Hill Farmstead in flavor which never quite appeared.

Overall a very enjoyable and well made beer to have at the Hill while I pondered Dasein and my mortality during a passing sun shower.

Pour from Shaun himself at 2015 FOFA. This beer easily was my favorite beer of the day. Incredibly tart, very light drinking. The tartness punches through as the dominant taste with massive notes of citrus and funk from whatever kind of yeast got in this thing. I wish there was more of this.
