750ml bottle poured into a Hill Farmstead oversized wine glass at the brewery.

A~ copper like glowing orange, pretty big head and a little lacing.

S~ holy hops up front! tons of tropical fruits, guava, lemon, lime, and a little orange. all followed by awesome bretty horse blanket funk.

T~ definitely follows the nose with some amber malt presence coming through. a lot more orange peel here and the continuation of amazing brett funk on the back end! perfectly rounded!

M~ really nice carb. super smooth and a little dry.

O~ really incredible! i'm glad i made the trip up to try this beauty! definitely one of the most interesting of the CD series. i still prefer the darker ones but thats just me! if you like Sue and E you're gonna be amazed by this!

Bottle at the brewery on Saturday 10/3/15.

Somewhat translucent orange color with a big white foamy head. Massive wine barrel and Hf yeast aroma. Smells very tart with some citrus notes nosing through, but mostly wine barrel dominant. Pleasant and somewhat unexpected mix of sweet and tart mingling with the wine barrel, which is up front and unapologetic. The finish is somewhat dry but leaves a lingering sweet tart/Flintstones vitamin aftertaste. Reminds me of a bolder version of Sue, with some of the more tart elements of CD10 sneaking in.

I would rank this my 3rd favorite CD so far, behind CD 11 and CD 10, but ahead of fresh CD6 and CD4.

Review #1075

Hazy, glowing mustard yellow appearance. The chill haze soon dropped and the liquid turned a nearly clear, brassy yellow color. The beer was topped by an inch-plus tall head that fell to a thin ring. Spotty lacing tricked along the glass.

Outstanding aroma. Fantastic interplay of funk, wine barrel and crisp saison character. Quite sour with loads of lemon and funky brett notes. Very citrusy and bright. Orange peel was noticeable. Somewhat candy-like. Lots of musty hay and grass. Nice balance between the fruity sweetness and dry farmhouse yeastiness. Fragrant white wine notes also came through strong. All in all, really interesting and complex.

The flavor profile was just as spectacular as the aroma. Quite tart yet balanced. Very lemony. Lemon rind was apparent. Loads of brett. Crisp and dry yet also semi-sweet. Hay-like. Citrus notes came through strong. Like the in nose, the wine barrels played a big role here too. Oaky Chardonnay came to mind. Slightly dry and tannic. Citrusy hop notes lingered after the swallow. Good amount of rind-like pith. Moderately bitter.

The mouthfeel was flawless. Pillowy soft and supple. Ultra creamy and smooth. The liquid was highly effervescent and remarkably fluffy, yet it still had a decent weight on the palate.

Civil Disobedience #13 is definitely the best saison I have ever tried. I can only imagine how amazing Anne must be.

Poured from a 750 mL bottle into a stemmed glass. On site at Hill Farmstead. This was bottled 07/2014.

Pours golden and leaves a couple fingers of white head. Nose is citrus, kiwi, peppercorn, white wine. Same in the taste, along with maybe a hint of honey. Finishes dry. Quite nice and balanced. Creamy medium body. Pairs quite well with cheese.

Rather dry. Some wine flavors. Tart, but not sour. Also did I mention dry?

Amazing beer. Split with my Wife at the tasting room on an unseasonably warm November day. Funk and wine dominate the nose and tongue, a fantastic beer and an awesome experience in the locale of HF. Wish it was available for takeout.
