Brewed at Hill Farmstead in August of 2013 when Tim and Adair came to Vermont for our Festival of Farmhouse Ales, this beer was aged for over a year in carefully selected barrels and then blended, bottled and allowed to mature for nearly a year.

Our friendships with and love of Tim and Adair are showcased here. We are honored and proud to share this beer with you—a transcontinental offering that is truly a work of love.

This beer is retired; no longer brewed.

750ml bottle. Served in a Sante Adairius stemmed glass. Pours a lightly hazy medium yellow body with a light orange hue. One finger effervescent white head, with the perfect amount of retention, bits of lacing. Smells of lemon, grainy cereal, a fair bit of white wine, even a bit of white wine grape must and a dry aroma; light farmhouse funk, light peppercorn, very light citrus. Flavour is a bit of grainy bread, lots of lemon, light funk, medium amounts of white wine, black pepper, more citrus. This is a lot like a more peppery Le Sarrasin. Mouthfeel is medium bodied, creamy, light on the tongue but heavy on the lingering flavours. Very nice on the palate. Overall, a very good white wine barrel-aged saison that follows in the footsteps of Flora b5, although the wheat seems to be missing here. There is a bit less white wine and more of the grain in this one in comparison. Definitely a real treat.

Looks juicy. Slightly cloudy. In the mouth, lemon gives way to grapefruit, mango, orange. Grapefruit dominates. Complex yeast character builds enjoyment. More lambic-like notes than any saison I've had previously. Mouthfeel fuller for style. Prob my favorite non-fruited saison to date!

Was able to enjoy this alongside some fellow beer nerds as a preamble to a whale share the following day. split 4 ways and I have to tell you I enjoyed this immensely! In my opinion, Hill Farmstead and Sante Adairius are the top 2 breweries in the world brewing Saisons right now so this collab did NOT disappoint at all!!

Thus far, the best saison I've ever had. Perfect beer.

Incredible complexity. Has a nice amount of funk that really balances it out, and it's a wonderful funk considering it's a cross between SARA and HF. Dry, lemon, everything you want.

A - Poured into a Kate the Great tulip a nice crystal clear golden hue with a nice one finger white head that fades to leave thin halo.

S - Aromas of bright house yeast, great wine barrel notes. Nice funk, almost cheesy. Very nice.

T - Taste is similar to the nose, great wine barrel notes, lovely yeast notes with great cheesy funk. Good vinous notes, great wine. Really solid qualities of saison and barrel.

M - Mouthfeel is nicely carbonated, though a bit over the thin side.

O - Overall this beer was rather tasty, nice balance between barrel and base funk saison. Quite nice.

Decent fizzy foamy 1/2 finger head fades fairly quickly, decent soapy lacing, semi hazy golden yellow color.

Nose tart funk, stone fruit and citrus like notes, little farmhouse thing, nice funk in general, little vinous and grape skin, even a bit floral.

Taste brings tart funk again, funky grassy malt, doughy thing straw, little lemony funk, farmhouse notes and bacteria funk, quite acidic, vinous grape skin notes with little buttery toasted oak barrel. Little bitterness, lemony grassy funk, acidic finish. Nice wine barrel juicy tart

Mouth is med bod, decent carb.
Overall much better than the first time I had it, delicious now

Aroma is bright, tart, and funky. Dry red wine and oak meet citrus and grapes. Brett funk, tart lemon, aged earthy hops.

The wine barrel is at the front with lots of brett as a follow up act. Some nice grape and nectarine in the middle. It finishes with a distinct lemony tartness.

Medium mouth feel with light carbonation, very dry, and tart at the end.

Outstanding tart saison!

One of the finest beers from the Hill Farmstead collection.

A uniquely complex beer with a delightful nose and a sublime flavor profile that highlights the very best of what Hill Farmstead and Sante Adairius can offer.

07/31/16 Update:

This beer has developed nicely in the bottle over the past year. There is noticeably more funk on the nose with a stronger citrus and wine barrel presence. The taste follows with a sublime wave of lemon and grapefruit citrus notes, a nice sour profile, and a terrific integration of wine barrels. Overall, this beer is almost as good as it gets.

Pours a beautiful deep hazy gold with orange with a good sized white head of small bubbles that leaves superb lacing.

The aroma hits of white wine, sharp tart, and funk.

The flavor follows with soft white grape, white wine, lemony tart, hints of a biscuity malt and honey sweetness. The finish has a dry oaky finish. The beer is soft and delicate, with wonderful depth of flavor.

A Top 5 Hill Farmstead bottled brew.

A sour saison that's more sour than saison and I'm okay with that. Nice stuff. This one was high on my list. Always amazed at the stuff these guys come up with for our bro down's. Kevin, just killin' it once again.

750 mL bottle. Hazy orange body. Medium white head. Orange citrus aroma. White wine. Taste is equally orangey. Light lemon tartness. Toasted malt cuts the sweetness of the white wine. Light body. Less heavy on the wine than Flora Cuvee, which we had just before this. A little less dynamic than Flora in that the citrus and malt flavor dominate and the wine is secondary.

Pour is deep golden in color with a nice haze, tight white head that dissipates a bit quickly. Nose is really heavy mineral and a hint of sulfur, salty, a decent amount of oak, light tangerine. Flavor is brighter on the tangerine, moderate mineral, very unique, dry finish, soft delicate body, nicely carbed, finish has a hint of bitterness and a touch salty. Really solid.

Bottle. Big wine character from the barrel but very complimentary and adds a ton of depth to this farmhouse ale. Very juicy. Pleasantly tart. Top tier HF beer but SARA shines through. Fantastic.

on tap at FOFA poured into a Hill Farmstead taster.

A~ glowing yellow, fluffy head and a lot of lacing.

S~ whoa! i don't even need to sip this, i want this in my nose at all times! dough, pepper, tropical fruit, all blended with lemony tartness. smells like a sour version of Bernice with guava! (SARA... thats a hint! ;-] )

T~ well the taste didn't take away from the smell at all! all is there! more tropical fruit here, a lot of guava, and a little passionfruit. followed by some hay, horse blanket brett funk and lemony tartness.

M~ great carb and extremely dry like a good champagne without all the extra carb. crisp and oh so delicate!

O~ i can't wait till this gets released in bottles. favorite of the fest for me and top 5 HF brew of all time as well! this really highlights the works of both SARA and HF perfectly! but... i thought Tired Hands had a part in this as well? i mean the keg was labeled "Tired SARA" i'm guessing HF and TH had a falling out since they weren't at FOFA too! but then again this beer wasn't cloudy at all so maybe Tired Hands didn't have anything to do with it haha!

On draft at Festival of Farmhouse Ales 2015. This collaboration was overshadowed at FoFA by the likes of Being & Time and Sarrasin, but this was still a tremendous saison, with all of those wonderful HF hallmarks - balanced, crisp, and clean.
