Notes: New iteration. Farmstead ale brewed with wheat, fermented with Brettanomyces, and hopped with Citra. Reminiscent of Wheat is the New Hops.

Dorothy (1921-1994) was our grandfather's sister, Hill Farmstead Brewery rests upon the land that was once home to her and her 13 siblings. In her honor, this hoppy Farmstead® ale is crafted from New Zealand and American hops, our distinctive yeast blend and water from our well. Dry hopped, unfiltered, and naturally carbonated, this is the ale that I dream to have shared with Dorothy.

Dorothy is the first hill farmstead beer I haven't been truly enamored with. Good, but just doesn't quite know what it wants to be. Not quite a pale, not quite a farmhouse, and just doesn't quite satisfy my thirst for either. Still very good I just wished it leaned a little further to one side or the other on the range from pale to farmhouse.

This pours, looks, smells, tastes like a Saison - but it says "pale ale" on the label.

Doesn't matter - it's light, crisp, pungent. Perfect. This is possibly the best saison I've ever had, even if it might be called a pale ale.

A - Very bright and hazy medium straw yellow color. Foam is pure white, dense, sticky, and the carbonation is moderate and steady.

S - Earthy lemon funk with delicate tartness, lemon rind.

T - Follows the nose. Funk throughout - has a lemon rind and Brett presence, delicate tartness builds after the sip goes down and becomes a little more puckering. Lingering lemon tartness with citrus bitterness.

M - Medium light to medium body, somewhat puckering, very dry on top of the tongue while the rest of the mouth salivates.

O - A very nice Saison, not my most favorite from HF but a wonderful, easy drinking, every day sipper.

On-tap in NY, pint glass.

A: Served a cloudy lemon color with a fuzzy white head that left sheets of lace down the glass.
S: Wheat and light grains with a light musty quality and slight hints of tart funk and stone fruits.
T: Dry grains and a crisp wheat backbone followed by hints of lemon zest, stone fruits, and slight apples and golden pear. I get hints of candy-like flavors at times, with a lingering sweetness in the finish.
M: Soft and effervescent carbonation, medium-light body, chewy yet clean mouthfeel. Very lightly tart in a clean and refreshing type of way that adds depth and complexity.
O: A beautiful saison with soft and delicate flavors coupled with a kiss of tartness and a hint of funk.
