Notes / Commercial Description:
Clover (2005-2014) was a grey cat. Simple. Yet, a few moments with her quickly revealed an independent, playful, occasionally subdued and reflective personality, one that held sway where she might roam. Clover was our compatriot, our guardian of grain, our huntress and our muse. We did not own Clover; she graced our presence.

In her honor, we mindfully blended barrels of Ann, Art, and Flora that had been aged for 12 to 22 months—guided by her lingering spirit towards a beer of elegance, grace and patience. As often as our Clover would, this beer took its own path and its own time to become what it is now; an effervescent, refined reflection of both our melancholy for her departure but, most importantly, our joy in traveling with her for a while.

This beer is retired; no longer brewed.

Enjoyed at GAB bottle share
Light fizzy head, decent retention, hazy blond lemon color

Nose soft creamy wheat, grainy notes, faint honey and nice farmhouse funk, little lemony, some buttery oak

Taste a little weird then really nice, honey and creamy wheat malt, little winey, fair acidity and lemony, tart little flemmy, mild buttery oak, drier finish

Mouth is lighter bod, fair acidity lighter carb, little flemmy

375 mL bottle. Clear golden. Smells of white wine, a little lemon, faint charred oak. A little bit of wheat. Tastes very lemony. Grainy up front. Strong white wine, but not as strong as the nose. Grain and oak in the back end. Light body. Medium carbonation. It is quite delicious, but doesn't really distinguish itself from its components, at least in my memory. It's a little difficult to accumulate the bottles to do a side by side.

Small pour at a share. After have had all of the base beers (Flora, Art, and Ann) I feel like this was a beautiful blend of the 3. You can tell it's mostly Flora, but I still could pick out the smartee taste that I associate with Ann. Loved this beer.

375ml bottle, served in a Hill Farmstead stemmed glass.

Pours a bright lemon yellow body, slightly hazy, one finger white head, perfect retention with bits of lacing. Smell is oak, mineral, farmhouse funk, slight straw, mild acetic acidity, touch of zest and citrus. Flavour follows, citrus, zest, hay, light farmhouse funk, mild vinegar acidity, light vinous character, mineral, bit of oak. A lot going on here, but this is a fairly restrained beer, really drinkable with a fair bit of complexity. Mouthfeel is medium bodied, creamy, perfectly carbonated, dangerously drinkable that one has to pause to appreciate the beer for what it is. Overall, a very tasty barrel aged saison. This didn't have as much of Flora as it did Art; but I've never had Ann so I can't draw a direct comparison to that one, unfortunately.

Pours a golden yellow with a moderate champagne like small bubble head. Smells slightly tart. Wonderful balanced acidic, smoth, souriah taste with a lemony tartness that lingers on the. Ack of the palate. An awesome beer.
