Notes / Commercial Description:
In the summer of 2013, our dear friend Menno Olivier, owner and brewer of Brouwerij De Molen, visited Hill Farmstead and collaborated on an imperial stout, which was then aged for 20 months in hand-selected 25-year-old bourbon barrels. With classic De Molen malt character, rich body, beautiful barrel notes and appropriately light carbonation, this expresses beautifully what friendship and respect can contribute when creating a beer.

375ml bottle poured into a Hill Farmstead taster

A~ pitch black, real tiny head and no lacing at all.

S~ crazy vanilla up front followed by a little booze. a rush of dark roasty malt and tons of caramel mid pallet! mmm...!

T~ pretty much all there from the nose which is pretty amazing! just more toasted oak here and a rush of sweet smooth bourbon on end!

M~ my only complaint is its a bit thin for an imperial stout, but other than that its got perfect carb and its super smooth!

O~ probably one of the best stouts from HF, the only other i can think of that i liked better might be BA Earl and that was too long ago! De Molen definitely had a lot of influence here and boy does it show! oh but most importantly that barrel!

A: inky black and visibly thick with a thin light beige head of slight retention and no lacing.
S: awesome bourbon and oak forward nose. Big vanilla bomb, with some cocoa, hints of coffee, and traces of nuts. Oak, vanilla, bourbon are clearly the dominant notes of a strong nose.
T: taste starts very mild with roasted malts and a hint of coffee, before bigger bolder vanilla bourbon bomb hits with some dry cacao in the finish. No taste of ethanol but you can feel it.
M: feels a little thinner than it looks, but could be the low carbonation. Fairly silky, but not really sticky for the sweetness.
O: amazing, if a touch under say Madness & Civilization 1 but still a super barrel and bourbon presence.

375 mL bottle. Black. No head. Thin collar. Intense bourbon aroma. Heavy oak and vanilla. Licorice and booze. Taste is equally intense. Bourbon. Heavy chocolate sweetness. Booze. Tingly oak. Some dark fruits linger in the finish. Heavy with low carbonation. This is tough to drink, but it is delicious.

Didn't know what to expect from this, as I've never had a hf stout and haven't had a de molen stout in a minute. And collabs suck more often than not, IMO. Really pleased, though, after drinking the 375 bottle. Aroma and appearance remind me of rare 15. It pours a little more clear and kicks up a little less head than I'd like. Similar to rare, you can smell the age on the barrel and imagine it plays a part in sucking some of the chewiness out of the beer. Flavor follows--a gnarled old barrel note--not sour at all, but, as others have said, wine-like. reminds me a bit of the derivations in the complexity of the melanoidin/leather/toffee/Barrel flavors (and lack of head). Less satisfying than derivation 3 in my opinion because it's thinner in the middle, but I'd take it over most high grade Ba stouts--incl rare 15, which I like very much, because it's danker and less sweet.

Pours as dark as you'd expect with a fleeting head the color of a frothy hot chocolate. Huge bourbon nose and a subtle tease of booze. It tastes of a decadent, bourbon-soaked chocolate cake. Smooth with a perfect viscosity and no alcohol heat whatsoever. This was a pleasure to drink and another barrel-aged masterpiece from Shaun Hill and friends.

Some hot alcohol on the nose but otherwise really nice. Lots going on and so well integrated. Sorry but that's all I got after so many great beers tonight. Matt, cheers man.

Bottle shared by Curran on my birthday- thanks a ton, man.

This one pours a silky light black, with very little head, and basically no lacing. I don't usually mention these sorts of things in reviews, but the cap has this weird little rubber thing on the bottom that made an audible pop when opening this one. It seems to be a way to hold the beer in the bottle better, and keep out oxidation. If that's correct, it's pretty cool.

Smells like vanilla, bourbon, chocolate, and coconut. Smells pretty decadent.

This definitely tastes like it was in the barrel for a long time (20 months). The barrel is dominant but not overwhelming, giving some flavors of sweet fruity bourbon, and some vanilla and coconut. The oak is definitely present, and nicely rendered. The base stout seems to be pretty dark-fruity, as there's definitely some port-like notes to this, too. This is definitely a more subtle, elegant sort of stout, nothing punches you in the face, it just slides out of the glass and whispers loudly that it's really good.

The long time in the barrel definitely gave this one a silky and oily mouthfeel, with very little carbonation- just enough to give it some pop on the tongue.

This is a really excellent and unique stout from two great breweries.
