Leaves of Grass represents our brewery's collective pursuit to create, explore and challenge. For each batch, we employ uniquely different processes and ingredients, all of which further our understanding of the art and science of brewing.
A Farmstead Ale brewed with Vermont organic malted barley, Vermont organic malted wheat, Vermont organic malted oats, hops, chamomile, heather flowers, yeast and our well water, then fermented in an oak tank.

Serving - at the source for on-site consumption. 375ml poured into a single HF glass, in one steady pour.
Appearance - cloudy deep yellow. Thick, stable, foamy head. Settles to a halo of thin foam that delicately laces the glass.
Smell - like a bouquet of flowers; fades to a hints of fresh hay with a twinge of barnyard funk.
Taste - follows nose, slightly more delicate. Juicy citrus followed by bitter rind as the hops become more salient. Slightly tart, with little sweetness.
Mouth feel - juicy, cloud-like and dries the tongue post-swallow, leaving you ready for another mouthful.
Overall - a real treat, a beautiful exemplar of a floral saison. Each element - the malt, hops, yeast/funk, and adjuncts - complement each other with near perfection as to accentuate their best components. So happy to have had the chance to try this.

L: poured into a tulip glass. Bright golden yellow in color and is opaque to moderate light. Strong carbonation created a solid inch of head which stuck around for the majority of enjoyment. When drinking, the lacing was there but quickly fell back to the head and never left any distinct lines...
S: strong lemon presence, some wildflower notes, some spice and a light yeasty nose...
T: incredibly smooth at first, strong wheat grass flavors blend with a lime zest and chamomile. Slightly sour with a taste that resembles dandelion tea. A touch of hop adds a tiny bit of bitterness...
F: medium high effervescentness with a medium low mouthfeel. A bit thin but smooth.

375 mL bottle. Hazy yellow. Big white head. Smells of wheat, yeast, and some floral notes. Tastes better. Very light lemon tartness. Strong yeast and chamomile. Floral flavors in the back end. Light body. Well carbonated. Pleasant and subtle.
